GRILLED PORK SHISH KABOBS

Grilled Pork Shish Kabobs image

A simple, excellent recipe for grilled pork tenderloin kebabs. Learn our tips and tricks for flavorful and tender, crowd pleasing shish kabobs.

Provided by Natasha Kravchuk

Categories     Easy/Medium

Time 4h10m

Number Of Ingredients 8

2 1/2 lb pork tenderloin (trimmed and cut into 1 1/2" pieces)
1 Tbsp Italian seasoning
1 1/2 tsp sea salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 Tbsp olive oil
1 large red onion (cut into 1" pieces)
1 Tbsp fresh parsley to garnish (optional)

Steps:

  • In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Separate onion pieces and add them to the bowl. Add 2 Tbsp olive oil and toss to combine. Cover and marinate in the refrigerator for at least 4 hours and preferably overnight.
  • Thread the kabobs onto metal skewers*, alternating between meat and onion. For even browning, the meat and onions should be just touching on the skewers and not crowded together. Let your skewers stay at room temperature for 30 minutes before placing on the grill.
  • Preheat your grill to Medium/high heat (400˚F). Add skewers in a single layer and grill for 8-10 minutes total. Meat skewers turn like a triangle so we cook about 3 minutes per side on all 3 sides. Grill until cooked through and meat reaches at least 145˚F internal temperature. Rest skewers 3 minutes before serving.

SPICY GRILLED PORK WITH FENNEL, CUMIN AND RED ONION

Spicy Grilled Pork With Fennel, Cumin and Red Onion image

Imbued with spices that char at high heat, this aromatic pork recipe is a snap to throw together - exactly what you want for a night of summer grilling. If you're got wooden skewers, don't forget to soak them in water for an hour before grilling, so they don't flare up. And if you're broiling and you don't want to bother with skewers at all, just spread the pork cubes out on a rimmed sheet pan, turning them halfway through cooking with tongs or a spatula. The pork is excellent served with pita or crusty bread or a rice pilaf, or simple grilled corn on the cob.

Categories     meat, main course

Time 30m

Yield 4 servings

Number Of Ingredients 12

1 3/4 pounds boneless pork shoulder, cut into 1 1/2-inch chunks
Kosher salt
1 lime, plus some wedges for serving
1/4 cup cilantro or basil, leaves and tender stems, plus more for serving
2 tablespoons fish sauce
2 garlic cloves, smashed and peeled
1 jalapeño or other green chile, seeded if desired
1 teaspoon honey
1 1/2 tablespoons fennel seeds
1 tablespoon cumin seeds
1 tablespoon coriander seeds
1 small red onion, sliced, for serving

Steps:

  • Season pork lightly with kosher salt and put it in a bowl or resealable bag.
  • Juice the lime into a blender or food processor and add cilantro, fish sauce, garlic, jalapeño and honey. Blend until the jalapeño and garlic are puréed, then add fennel, cumin, coriander seeds and pulse four or five times to bruise the spices and mix them in.
  • Pour mixture over the pork, tossing to coat the pieces. Refrigerate for at least 30 minutes while you heat the grill, or up to 24 hours.
  • When ready to cook, heat the grill or broiler with a rack positioned 4 inches from the heat source.
  • Thread the pork onto skewers, leaving a little space between cubes. Grill over the highest heat possible, or broil on high, for 2 to 5 minutes, then flip the skewers and continue cooking until the meat is browned all over and charred in spots. It should be just cooked through: A little pink is OK, but there shouldn't be any red spots.
  • Serve the pork with cilantro sprigs and onion slices on top, and lime wedges on the side for squeezing.

1/3 cup vegetable oil
1/4 cup dry red wine
3 tablespoons red wine vinegar
3 tablespoons soy sauce
1 tablespoon chopped garlic
1 tablespoon chopped peeled fresh ginger
1 1/2 teaspoons sugar

Steps:

  • Thread two pieces of pork and 2 pieces of onion alternately on each skewer. Season with salt and pepper. Arrange kebabs in 13x9x2-inch glass baking dish.

Tips:

  • Choose the right cut of pork: A lean cut of pork, such as tenderloin or flank steak, will work best for these kebabs. Avoid using fatty cuts of pork, as they will not cook evenly.
  • Use a flavorful marinade: The marinade is what will give your kebabs their flavor, so be sure to use a flavorful one. The recipe in the article uses a marinade made with olive oil, lemon juice, garlic, oregano, and thyme. You can also use other herbs and spices, such as rosemary, cumin, or chili powder.
  • Let the pork marinate for at least 30 minutes: The longer the pork marinates, the more flavorful it will be. If you are short on time, you can marinate the pork for as little as 30 minutes, but for best results, marinate it for at least 2 hours.
  • Preheat your grill or oven: Before you start cooking the kebabs, be sure to preheat your grill or oven. This will help to ensure that the kebabs cook evenly.
  • Cook the kebabs over medium heat: Cook the kebabs over medium heat so that they have a chance to cook through without burning.
  • Serve the kebabs with your favorite sides: The kebabs can be served with a variety of sides, such as rice, roasted vegetables, or a salad.

Conclusion:

Marinated pork and red onion kebabs are a delicious and easy-to-make dish that is perfect for a summer cookout. By following the tips in this article, you can make sure that your kebabs are flavorful and cooked to perfection.
