Time 8h20m

Yield 16

Number Of Ingredients 12

½ cup olive oil
½ cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
¾ teaspoon dried basil
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

Steps:

  • In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
  • Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
  • To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

4 clove garlic
4 Tbsp italian flat leaf parsley
1 bunch green onions (both green and white parts)
3 Tbsp fresh chopped basil
2 tsp fresh chopped oregano
1/2 c good quality balsamic vinegar
1/4 c apple cider vinegar
3/4 c good quality olive oil
1 pinch salt and pepper to taste
1 pkg crackers
1 loaf french bread
1 bunch edible flowers

Steps:

  • 1. Cut cheeses into 1/4 inch squares then in half again Arrange slices on their ends, alternating one piece cheddar then one piece cream cheese. Make sure cheese is very cold before slicing or it may be necessary to spread the cream cheese over the cheddar with a knife.
  • 2. Mince garlic and dice pimentos (red peppers), finely chop fresh herbs. Combine herbs, and peppers in a small bowl, add all remaining ingredients, blend well to combine Salt and pepper to taste
  • 3. Pour marinade over arranged cheese, cover and refrigerate overnight. There will be a lot of liquid at first but it will absorb into the cheese during the marinating process. Serve with crackers and french bread slices

Tips:

  • Choose fresh herbs: The fresher the herbs, the more flavorful your cheese will be. Look for herbs that are brightly colored and have a strong scent.
  • Use a variety of herbs: Don't be afraid to mix and match different herbs to create your own unique flavor combination. Some popular herbs to use include basil, chives, dill, oregano, parsley, rosemary, and thyme.
  • Chop the herbs finely: This will help them distribute evenly throughout the cheese and release their flavor.
  • Use a good quality olive oil: The olive oil you use will also affect the flavor of your cheese. Choose a flavorful, extra-virgin olive oil.
  • Marinate the cheese for at least 4 hours: This will give the herbs time to infuse the cheese with their flavor.
  • Serve the cheese at room temperature: This will allow the flavors to fully develop.
