This recipe was given to me by a friend. I have made it several times, and it doesn't last long! It does take a while to prepare, but it is worth it. Great presentation and delicious flavors.

8 ounces sharp cheddar cheese
1 (8 ounce) package cream cheese
1 teaspoon sugar
3/4 teaspoon dried basil
1 dash salt (to taste)
1 dash black pepper (to taste)
1/2 cup olive oil
1/2 cup white wine vinegar
1 (2 ounce) jar diced pimentos, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 garlic cloves, pressed

Steps:

  • Cut cheddar cheese and cream cheese into 1/4 inch slices, then again in half.
  • Using a small dish, place cheese slices on end alternating cheddar and cream cheese.
  • Make the marinade by combining sugar, basil, salt, pepper, oil, vinegar, pimento, parsley, onion and garlic.
  • Pour marinade over cheese, cover and refrigerate overnight.
  • Serve with crackers.

1/2 cup olive oil
1/4 cup white wine vinegar
1/4 cup fresh lime juice
7 ounces roasted red peppers, drained and diced
3 green onions, chopped
3 tablespoons fresh flat leaf parsley, chopped
3 tablespoons fresh cilantro, chopped
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces colby-monterey jack cheese
8 ounces monterey jack pepper cheese
8 -16 ounces cream cheese

Steps:

  • Whisk together olive oil, vinegar, and lime juice until blended.
  • Stir in red peppers, green onions, parsley, cilantro, sugar, salt and pepper.
  • Set marinade aside.
  • Cut blocks of cheese in half lengthwise.
  • Cut into thin rectangular slices.
  • Arrange cheese slices alternately into a pie dish or other shallow dish, standing slices on end.
  • Pour marinade over slices and spread gently with fork until cheese is pretty much covered.
  • Cover and chill for 8 hours or overnight.
  • Peel back cellophane slightly and pour most of marinade out into sink.
  • Serve with crackers.

1 lb cheese, cheddar or pepper jack, cut in cubes
1/2 c olive oil
1/2 c white wine vinegar
3 Tbsp chopped fresh parsley
3 Tbsp minced fresh green onions
1 tsp sugar
1/4 tsp dried basil
1/2 tsp salt
1/2 tsp freshly ground black pepper
3 clove minced garlic
1 jar(s) (2 ounce) pimentos, drained and chopped

Steps:

  • 1. Buy cubed cheese to make this recipe quick and easy. You can use any cheese you like.
  • 2. Place cheese in a large bowl and set aside. Place all remaining ingredients in a jar, place lid on jar tightly and shake to combine everything well. pour marinade over cheese, stir to coat all, cover bowl and refrigerate for at least 8 hours, preferably overnight.
  • 3. Arrange cheese on serving tray. Spoon some marinade over all, and serve with toothpicks on side.
  • 4. Great with crackers and fresh veggies.

8 oz sharp cheddar cheese
8 oz cream cheese
1 tsp sugar
6 oz jar pimentos (red peppers)
4 clove garlic
4 Tbsp italian flat leaf parsley
1 bunch green onions (both green and white parts)
3 Tbsp fresh chopped basil
2 tsp fresh chopped oregano
1/2 c good quality balsamic vinegar
1/4 c apple cider vinegar
3/4 c good quality olive oil
1 pinch salt and pepper to taste
1 pkg crackers
1 loaf french bread
1 bunch edible flowers

Steps:

  • 1. Cut cheeses into 1/4 inch squares then in half again Arrange slices on their ends, alternating one piece cheddar then one piece cream cheese. Make sure cheese is very cold before slicing or it may be necessary to spread the cream cheese over the cheddar with a knife.
  • 2. Mince garlic and dice pimentos (red peppers), finely chop fresh herbs. Combine herbs, and peppers in a small bowl, add all remaining ingredients, blend well to combine Salt and pepper to taste
  • 3. Pour marinade over arranged cheese, cover and refrigerate overnight. There will be a lot of liquid at first but it will absorb into the cheese during the marinating process. Serve with crackers and french bread slices
