1/2 pt heavy cream
1/2 medium onion
4 large mushrooms
1 Tbsp parsley
2 Tbsp green onion tops
1 tsp creole seasoning
1 tsp lemon juice
5 Tbsp bread crumbs
1 lb jumbo lump crab meat

Steps:

  • 1. . Heat the cream in a skillet and reduce by about a third. Add all the vegetables and return to a boil. Stir in the Creole seasoning, lemon juice, and 3 Tbs. Parmesan cheese. 2. Add the crabmeat and toss in the pan to combine with the sauce. Be careful not to break up the lumps. 3. Divide the mixture into four ovenproof dishes for appetizers, two for entrees. Combine the remaining Parmesan cheese and bread crumbs, and sprinkle the mixture over the top. Put the dishes into the broiler until the sauce begins to bubble. Serve immediately

1/4 cup (60g) mayonnaise
1/2 cup (120g) sour cream
1 and 1/4 cups (155g) shredded cheddar cheese, divided
1/2 teaspoon ground mustard
1 teaspoon lemon juice
1 and 3/4 teaspoons Old Bay seasoning*
2 teaspoons worcestershire sauce
1 pound fresh lump crab meat*
optional: 2 dashes of hot sauce (or to taste)

Steps:

  • Preheat oven to 375°F (191°C).
  • In a large mixing bowl using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese on medium-high speed until smooth and creamy, about 1 minute.
  • Add the mayonnaise, sour cream, 1 cup cheddar cheese, ground mustard, lemon juice, Old Bay seasoning, worcestershire sauce, and hot sauce (if using). Beat on medium-high speed until combined. Using a spoon or rubber spatula, gently fold in the lump crab meat. If you used hot sauce, taste, then add more hot sauce if desired.
  • Transfer to a 9-inch (or slightly larger) baking pan, pie dish, or oven-safe skillet. Sprinkle with remaining 1/4 cup of cheddar cheese.
  • Bake for 25 minutes or until hot and bubbly around the edges.
  • Serve warm.
  • Cover and store leftovers in the refrigerator for up to 5 days. Reheat in the microwave or in a 350°F (177°C) until warmed throughout.

25 wonton wrappers, cut in half diagonally into triangles
1 teaspoon kosher salt
One 8-ounce block cream cheese, softened
2 tablespoons whole milk
1 tablespoon sriracha
2 teaspoons brown sugar
2 teaspoons soy sauce
One 6-ounce can lump crab meat, drained and shredded
1/2 cup grated Monterey Jack cheese, plus more for sprinkling over top
2 scallions, thinly sliced, green and white parts separated
Sprinkle of paprika, for garnish

Steps:

  • Heat the vegetable oil in a large heavy-bottomed pot until it reaches 350 degrees F.
  • In batches, carefully lower the wrappers into the hot oil and fry until golden brown, 1 to 2 minutes. Remove to a paper towel to drain, sprinkle with salt and set aside.
  • Preheat the oven to 350 degrees F.
