1 cup Parmesan Cheese, grated
1/2 cup Onion, diced
1 Large Egg
1/4 cup Ketchup for mixing with beef (see my recipe for homemade Ketchup!)
1/3 cup Ketchup for spreading on top of loaf (see my recipe for homemade Ketchup!)
1/2 tsp Salt
1/2 tsp Ground Pepper

Steps:

  • Preheat oven to 400 degrees F. Line a loaf pan with aluminum foil for easy removal of the meatloaf after it is cooked.
  • Finely dice the Onion
  • Mix all ingredients (except the 1/3 cup Ketchup reserved for the top) together in a large bowl with a fork or with hands: beef, parmesan cheese, onion, egg, ketchup, salt, pepper.
  • Form a loaf in the loaf pan. Spread the remaining 1/3 cup Ketchup over the top of the meatloaf. Bake in the oven for 45 minutes.
  • Remove from the oven and let sit for 5 minutes. Remove from the pan, cut and serve with roast or mashed potatoes or salad. Enjoy!

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

2 lb ground sirloin
16 oz bob evans original breakfast sausage (tube roll)
1 clove garlic
1 vidalia onion
1/2 tsp sage, dried
2 slice bread heals crumbled
1 egg
1 Tbsp black pepper
1 green pepper diced (if desired)
1 tsp salt

Steps:

  • 1. Preheat oven 375
  • 2. Slice 4 rings from Vidalia onion and set aside. Dice the remaining onion, dice green pepper (if desired), mince garlic.
  • 3. In a large bowl, mix ground sirloin, sausage, diced onion, diced green pepper, garlic, salt, pepper and sage, mix evenly. Crumble bread and add egg, again mixing evenly.
  • 4. shape meat into a loaf and place in a 7x11 glass baking dish. Top with sliced onion rings. Cover with foil and bake for 40 minutes. Uncover and bake for 15 minutes or longer for welldone.
  • 5. remove from oven, let stand for 10 minutes before slicing.
  • 6. In the past I have also baked with bacon strips on the top. I usually will make a marinara on the side or gravy of some sort.
