MARGARITA SHRIMP COCKTAIL

Margarita Shrimp Cocktail image

Wow... this is amazing! It's a cross between a shrimp cocktail and Mexican salsa. We were a little unsure of the mango and avocado pairing but it was fabulous. The shrimp soak up the flavors from the horseradish, onions, and jalapeno. This will be great to bring to a party or to have for a snack on a relaxing evening home.

Time 10m

Number Of Ingredients 14

2 jar(s) jars of salsa (16 oz each)
2 Tbsp hot sauce
2 to 4 Tbsp prepared horseradish to taste (we actually like 6 to 8)
1/4 c chopped jalapenos (from a jar)
1 good sized fist-full of cilantro, chopped
1/4 tsp black pepper
pinch salt
1/2 c diced red onion
3 medium roma tomatoes, diced
1 large peeled and chopped mango
1/2 lb frozen popcorn sized shrimp, peeled and deviened
1 or 2 large avocados, chopped
4 Tbsp lime juice
tortilla chips

Steps:

  • 1. Mix first 7 ingredients in a medium sized bowl.
  • 2. Toss in tomatoes, onions, mango, and shrimp.
  • 3. Chop avocado and toss with lime juice. Leave to soak for 3 to 5 minutes. This will slow down the browning process of the avocado.
  • 4. Add avocado lime juice to mixture and toss.
  • 5. Serve with tortilla chips.
  • 6. **NOTE** For a very impressive presentation, I like to serve this in a margarita glass placed on top of a dessert sized plate with some of the avocado mixed in and some sprinkled on top. A lime wedge on the edge of the glass and tortilla chips around the plate. Makes a great appetizer for a dinner party or a great dip for a big party!

Number Of Ingredients 19

SHRIMP:
1 1/2 pounds medium shrimp with shells (26 to 30 shrimp)
4 cups water
2 teaspoons salt
1 1/2 cups dry white wine or nonalcoholic wine
2 tablespoons lime juice
5 black peppercorns
Handful of fresh cilantro
MARGARITA SAUCE:
1/2 cup orange juice
1/2 cup ketchup
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1/4 cup lemon juice
2 tablespoons tequila, if desired
2 tablespoons vegetable oil
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
Dash of red pepper sauce

Steps:

  • Remove shells from shrimp, leaving tails intact. Set shells aside for the stock. Using a small, pointed knife or shrimp deveiner, make a shallow cut lengthwise down the back of each shrimp, then wash out the vein. In a 4-quart Dutch oven, heat shrimp shells, 4 cups water and 2 teaspoons salt to boiling over high heat. Add wine, 2 tablespoons lime juice, the peppercorns and handful of cilantro. Reduce heat to medium. Cover and cook 30 minutes. Strain stock through a strainer into a large bowl and discard shells, peppercorns and cilantro. Return stock to same pan and heat to boiling over high heat. Add shrimp; remove pan from heat. Cover and let stand 8 to 10 minutes until shrimp are pink and firm. Meanwhile, fill large bowl half full with ice and water. Strain stock through strainer and plunge shrimp into ice bath. Shrimp can be refrigerated in ice water for several hours. In medium bowl, mix all sauce ingredients. (Don't use aluminum bowl because the acid in the sauce may react.) Stir in cooked shrimp to coat. Cover and refrigerate at least 30 minutes but no longer than 3 hours. Serve cold.

Tips:

  • Use fresh lime juice. Fresh lime juice will give your margarita a bright, tart flavor. Avoid using bottled lime juice, which can be bitter and artificial-tasting.
  • Choose a good quality tequila. The tequila is the main ingredient in a margarita, so it's important to choose a good one. Look for a tequila that is 100% agave and has a smooth, clean flavor.
  • Use a good quality orange liqueur. The orange liqueur adds a sweet, citrusy flavor to the margarita. Look for an orange liqueur that is made with real oranges and has a rich, flavorful taste.
  • Don't overshake the margarita. Overshaking the margarita will make it watery and dilute the flavors. Shake the margarita just until the ingredients are combined.
  • Serve the margarita immediately. Margaritas are best enjoyed fresh. Once they've been made, they should be served immediately.

Conclusion:

A margarita is a classic cocktail that is perfect for any occasion. It's easy to make, delicious, and refreshing. With a few simple tips, you can make the perfect margarita at home. So next time you're looking for a delicious cocktail, give the margarita a try. You won't be disappointed!
