MAPLE COUNTRY RIBS
I brought this recipe with me from Quebec after my husband and I were married. The rich maple flavor impressed my in-laws the first time I made dinner for them.-Anne-Marie Fortin, Swanton, Vermont

Steps:
- 1. Ribs: Sprinkle both sides with the garlic powder and Everglades seasoning. Place a paper towel over top and allow to rest while you make the sauce.
- 2. Sauce: Place all ingredients, except chopped bacon and the liquid smoke, in a saucepan. Mix well and heat stirring occasionally. Do not allow to burn. Once it begins to come to a soft boil, remove from heat, stir in bacon bits. Place the sauce in a bowl or glass measuring cup and cover with Saran Wrap. Set aside. (Do not refrigerate)
- 3. Spray your Crock Pot with cooking spray. Place ribs in and sprinkle with the mesquite liquid smoke. I used a cap full. Cook on low for 4 1/2 hours.
- 4. Check meat after the 4 1/2 hours. Should be a little pink. Drain the liquid and cover the ribs with the BBQ sauce and cook for another 1 1/2 to 2 hours.
- 5. My Crock Pot cooks a little hotter than normal so you may have to adjust your times or cook until a meat thermometer reads 145°. I must add that your house is going to smell so yummy while this is cooking. Enjoy.

Tips:
- Choose the right ribs: Look for ribs that are meaty and have a good amount of marbling. Avoid ribs that are too thin or have a lot of bone.
- Prepare the ribs properly: Remove the membrane from the back of the ribs and trim any excess fat. Cut the ribs into individual pieces, if desired.
- Use a good quality maple syrup: The type of maple syrup you use will make a big difference in the flavor of the ribs. Choose a dark, robust maple syrup for the best flavor.
- Don't overcook the ribs: Ribs are best when they are cooked until they are tender but not falling off the bone. Overcooked ribs will be tough and dry.
- Let the ribs rest before serving: Once the ribs are cooked, let them rest for a few minutes before serving. This will allow the juices to redistribute and make the ribs more flavorful.
Conclusion:
Maple country ribs are a delicious and easy-to-make dish that is perfect for any occasion. With just a few simple ingredients, you can create a flavorful and tender dish that everyone will love.
