½ cup unsalted butter, melted
1 teaspoon cream of tartar
1 ¼ cups heavy whipping cream
¼ cup maple syrup
½ teaspoon ground cinnamon
1 pinch sea salt

Stir milk-pumpkin mixture slowly into the mixture until just combined; transfer to a separate bowl.
  • Clean and dry out the bowl and beaters. Beat egg whites and cream of tartar on high speed until stiff peaks form. Fold 3/4 of the egg white mixture into the pumpkin mixture using a spatula; pour into the remaining egg whites, folding mixture in slowly until batter is smooth but still light and fluffy. Pour batter into the prepared pan.
  • Bake in the preheated oven until edges are set and center still jiggles slightly, about 50 minutes. Let cool completely, at least 30 minutes.
  • Beat heavy cream, maple syrup, 1/2 teaspoon cinnamon, and 1 pinch salt together in a bowl using an electric mixer until soft peaks form. Spread over cooled cake.

MAPLE-CINNAMON CAKE

Maple-Cinnamon Cake image

Yield Serves 12

Number Of Ingredients 12

Nonstick vegetable oil spray
1/2 cup unsweetened applesauce
1/2 cup pure maple syrup
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 1/2 cups cake flour
1/2 cup (packed) golden brown sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 400°F. Spray 8 x 8 x 2-inch baking pan with vegetable oil spray. Whisk applesauce, syrup, oil, egg and vanilla in large bowl until blended. Sift flour, brown sugar, baking powder, cinnamon, baking soda and salt into applesauce mixture. Stir to blend. Transfer batter to prepared pan. Bake cake until edges pull away from sides of pan and tester inserted into center comes out clean, about 28 minutes. Transfer pan to rack and cool cake completely. Cut into 12 pieces and serve.

Tips:

  • Use high-quality ingredients: This will make a big difference in the flavor of your cake. Look for pure maple syrup, ground cinnamon, and fresh butter.
  • Cream the butter and sugar until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter, more tender cake.
  • Add the eggs one at a time, beating well after each addition: This will help to prevent the batter from curdling.
  • Sift the flour and baking powder together before adding it to the batter: This will help to ensure that the cake is evenly mixed and has a light texture.
  • Do not overmix the batter: Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help to ensure that the cake rises evenly.
  • Test the cake for doneness by inserting a toothpick into the center: The toothpick should come out clean when the cake is done.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.

Conclusion:

This maple cinnamon cake is a delicious and easy-to-make recipe that is perfect for any occasion. The cake is moist and flavorful, with a perfect balance of maple and cinnamon. The frosting is sweet and creamy, and it complements the cake perfectly. This cake is sure to be a hit with everyone who tries it!
