I have to thank Sharon123 for inspiring me to make this!!! If you like this check out her East Indian Cheese Log #48072. I wanted to make this but was snowed in, and made my alternative to it for a Christmas appetizer. And if I must say so quite interesting ! Impressive !!!!!!! You can replace the onions with 1/4 cup powdered sugar and use for topping for French toast or cake Filling!

2 (8 ounce) packages cream cheese
1/2 cup mango chutney (Jaipur)
1 onion, chopped
1 tablespoon curry powder
1 cup unsalted mixed nuts
2 teaspoons ginger paste (Jaipur)
1/4 teaspoon cinnamon
1/4 teaspoon cardamom

Steps:

  • Mix all in a food processor to make a nice spread.
  • Serve with crackers, toasted Indian bread{Naan}, Grilled chicken, or fresh vegies and fruit.

1/4 cup mayonnaise
1/2 cup shredded cheddar cheese
1 teaspoon curry
1 bottle Hot Mango Chutney (or chutney of your choice)
peanuts
chopped green onions

Steps:

  • Mix together cream cheese, mayonnaise, cheddar and curry and spread onto serving plate. Top with chutney; sprinkle with peanuts and green onions. Serve with crackers.

6 oz cream cheese
2 Tbsp hot mango chutney, or regular mango chutney with 2 1/4 teaspoons dijonmustard and 6 drops tobasco sauce
1/2 c imitation crab, chopped
36 large crackers or 18 belgian endive leaves

Steps:

  • 1. In a small bowl beat cream cheese with an electric mixer until smooth.
  • 2. Beat in the hot mango chutney(or regular with Dijon and tabasco)
  • 3. Fold in the crab.
  • 4. Form into a ball and serve with thick crackers, such as Triscuits. Or for individual servings pipe the mixture into the Belgium endive leaves.

900 g mango pulp
115 ml lemon juice
115 ml orange juice
800 g caster sugar

Steps:

  • Preheat oven to 100°C.
  • Place mango pulp and juices into a large pan over low heat and simmer for 10-15 minutes or until most of the liquid has evaporated.
  • Meanwhile spread the sugar on a large baking tray, place in the oven and warm for 5 minutes.
  • Blend or sieve the mango mixture, then return to the pan.
  • Stir in the warmed sugar and cook gently over low heat until the sugar has dissolved.
  • Increase the heat to medium and cook, stirring occasionally to prevent catching, for up to 30 minutes or until mixture is thick.
  • Spoon the mixture into clean, sterilised jars. Cover and seal.
  • Mango mixture will keep in the fridge for up to 3 weeks.

Tips:

  • For a smoother spread, strain the mango pulp before cooking it.
  • Use a heavy-bottomed saucepan to prevent the mango spread from burning.
  • Stir the spread constantly while cooking to prevent it from sticking to the bottom of the pan.
  • The spread is ready when it has reached a thick, jam-like consistency. To test this, spoon a small amount of the spread onto a plate and let it cool. If it holds its shape, it is ready.
  • Store the mango spread in a clean, airtight jar in the refrigerator for up to 2 weeks.
  • You can also freeze the mango spread for up to 3 months. To freeze, spoon the spread into an airtight container and freeze. Thaw the spread overnight in the refrigerator before using.
