Tips:

  • Prep the Melted Butter: To create a more homogeneous dough, ensure the melted butter is at room temperature before mixing. This will ensure all ingredients bind together easily.
  • Chilling the Dough: Chilling the dough is crucial for two reasons. First, it makes it easier to handle and less sticky. Secondly, it prevents the dough from spreading too much during baking, resulting in crispier shortbread bars.
  • Even Baking: To achieve evenly baked shortbread bars, ensure your oven is preheated to the correct temperature before placing the baking sheet inside. Additionally, rotate the baking sheet halfway through the baking time to promote uniform browning.
  • Create a Flavorful Mango Layer: For a vibrant and flavorful mango layer, use ripe, sweet mangoes. Puree them into a smooth consistency and add a touch of lime juice to balance the sweetness and enhance the fruit's flavor.
  • Keep an Eye on the Mango Puree: While baking the mango puree, keep a close eye to prevent it from bubbling over. If it starts to rise, reduce the oven temperature slightly and continue baking until it thickens and sets.
  • Adding the Coconut: When incorporating the shredded coconut into the mango puree, toast it beforehand to enhance its flavor and texture. Toasting also adds a delightful crunch to the bars.
  • Cooling and Cutting: Allow the mango shortbread bars to cool completely before slicing them. Chilling them for a few hours or overnight firms them up, making them easier to cut into clean, neat pieces.
