1 cup water
1/2 cup sugar
Gray salt
3 cups ice
1 1/2 cups Mango Margarita Mix
4 ounces tequila
2 ounces triple sec
Lime wedges
Mint Salt, recipe follows

Steps:

  • Peel and pit the mangoes and cut them into large chunks. Place the mango in a blender with the water, sugar, and a pinch of salt. Blend until smooth. Taste and add more sugar, if necessary.
  • Fill the blender with ice and add the Mango Margarita Mix, tequila, and triple sec. Blend until smooth. Rub the rim of a margarita glass with a lime wedge and dip into Mint Salt to coat rim. Fill glass and enjoy!

The original recipe calls for crushed pretzels for the crust. After making and tasting the pretzels got a bit soggy. I felt it would taste better with a graham cracker crust. However, I have not tried the graham cracker crust yet. Either way I hope you enjoy!

1 1/4 cups graham crackers or 1 1/4 cups pretzels, crushed
1/4 cup sugar
1/2 cup butter or 1/2 cup margarine, melted
1 pint mango sorbet, slightly softened
2 (10 ounce) boxes frozen strawberries, in syrup thawed
1/2 cup frozen margarita mix, thawed
1 cup whipping cream, whipped
10 fresh strawberries, halved, for decoration (optional)
1 small mango, cut into cubes, for decoration (optional)
10 (4 inch) wooden skewers, for decoration you can cut longer skewers if needed (optional)
coarse sugar, for decoration (optional)

Steps:

1/3 cup vegetable oil

4 eggs
1 jar (1 lb 4 oz) sliced mango in extra-light syrup, well drained, diced
Remaining diced mango
1 container (8 oz) frozen whipped topping (thawed)
3 containers (6 oz each) Yoplait® Original yogurt mango

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with baking spray with flour (do not use dark or nonstick pan). In large bowl, beat cake mix, margarita mix, oil, water, lime peel, eggs and 1 cup of the diced mango with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 32 to 36 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
