Time 10m

Number Of Ingredients 7

1/2 c pineapple, crushed, drain and reserve juice
1/2 c medium sweet onion, minced
4 ripe avocados, coarsely mashed
1 - 2 chipotle pepper in adobo sauce, finely minced (more or less to taste)
1/2 tsp salt
2 Tbsp cilantro, fresh chopped
1 medium mango, ripe, seeded, peeled and diced

Steps:

  • 1. Drain crushed pineapple, reservice juice. In a small bowl, combine onion, avocados, chipotle peppers, salt, cilantro and 2 tablespoons of the reserved pineapple juice.
  • 2. Gently mix in mango and crushed pineapple. Serve immediately. Great with chips, fish, pork, or topping for tacos, etc.

Tips:

  • Use ripe mangoes: The riper the mangoes, the sweeter and more flavorful your guacamole will be.
  • Roast the chipotles: Roasting the chipotles will help to mellow their flavor and add a smoky depth to the guacamole.
  • Use fresh lime juice: Fresh lime juice will add a bright, citrusy flavor to the guacamole. Bottled lime juice will not work as well.
  • Don't over-mash the avocados: You want the guacamole to be chunky, not smooth. Over-mashing the avocados will make the guacamole too mushy.
  • Season to taste: Add salt, pepper, and cumin to taste. You can also add other spices, such as chili powder or smoked paprika, if desired.

Conclusion:

This mango chipotle guacamole is a delicious and easy-to-make appetizer or snack. It's perfect for parties, potlucks, or just a casual get-together. The combination of sweet mangoes, smoky chipotles, and creamy avocados is sure to please everyone. So next time you're looking for a new guacamole recipe, give this one a try. You won't be disappointed!
