MANDARIN ORANGE CHICKEN TOSSED SALAD

Mandarin Orange Chicken Tossed Salad image

From Light & Tasty magazine...submitted by R. Heimerl. I love - just love - this salad! I've served it many times for lunch buddies! The dressing is what makes this dish! I hope you enjoy it too! **Time: allow 1-2 hours of time to marinate chicken and then afterwards another 1-2 hours to chill chicken after cooking. I like to cook the chicken the day before so the salad itself is easy to throw together.***

AVOCADO MANDARIN TOSSED SALAD

Avocado Mandarin Tossed Salad image

This is so refreshing and tasty. Doesn't hurt that it's also really good for you too. P.S. You may want to add more avocado because I know I sure do every time I make it.

Provided by Ashley Marie

Categories     Lettuce Salads

Time 20m

Number Of Ingredients 7

1-11 oz. can(s) mandarin oranges
1/2 c thinly sliced green onion
1/3 c coarsely chopped pecans
1/8 tsp pepper
4 c torn green leaf lettuce
1 medium avocado, peeled and sliced
1/4 c prepared italian dressing

Steps:

  • 1. In a bowl combine the oranges, onions, pecans and pepper. Refrigerate for 30 minutes.
  • 2. Just before serving, place the greens in a salad bowl, top with orange mixture and avocado slices. Drizzle with dressing.

Tips:

  • Choose fresh and ripe mandarins: The quality of your salad depends on the quality of your mandarins. Look for mandarins that are heavy for their size, with bright, unblemished skin. Avoid any mandarins that are bruised or soft.
  • Use a variety of greens: Don't just stick to one type of lettuce. Mix and match different greens, such as romaine, arugula, spinach, and watercress, to add flavor and texture to your salad.
  • Add some crunch: Toasted nuts, seeds, or croutons are a great way to add some crunch to your salad. They also add flavor and healthy fats.
  • Don't forget the dressing: The dressing is what brings all the flavors of your salad together. Use a light and flavorful dressing, such as a citrus vinaigrette or a honey-mustard dressing.
  • Serve immediately: Mandarin Tossed Salad is best enjoyed immediately after it is made. The longer it sits, the more the mandarins will release their juices and the salad will become watery.

Conclusion:

Mandarin Tossed Salad is refreshing and colorful salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its bright citrus flavor and crunchy texture, Mandarin Tossed Salad is sure to be a hit with everyone who tries it.
