A quick and easy Southern classic. You'll love our meatloaf recipe with it's slightly sweet tomato based sauce topping.

Number Of Ingredients 14

1/2 cup Ketchup
1/4 cup Brown Sugar
1 Tablespoon Yellow Mustard
3 slices White Loaf Bread
8 Saltine Crackers
1/4 cup Milk, possibly a little more.
2 lbs. Ground Beef
1 Egg, beaten
1/4 small Onion, finely chopped.
1 Tablespoon Garlic Powder
1 Tablespoon Worcestershire Sauce
1 teaspoon Dry Ground Mustard
1 teaspoon Black Pepper
1 teaspoon Salt, optional

Steps:

  • Place ketchup in a small mixing bowl.
  • Add brown sugar.
  • Add yellow mustard.
  • Stir well. Set aside.
  • In a large mixing bowl, break the bread into small pieces.
  • Crumble the saltines and add to the bowl.
  • Add the milk.
  • Stir well to moisten the bread and saltines. Use more milk if needed. Set aside for 5 minutes.
  • Chop the onions very fine. Set aside.
  • Crumble the ground beef on top of the moistened bread and saltines.
  • Add the lightly beaten egg.
  • Add the onions.
  • Add the garlic powder.
  • Add the Worcestershire Sauce.
  • Add the ground mustard.
  • Add the black pepper.
  • Gently mix all the ingredients together until fully combined.
  • Place the meat mixture in a baking loaf pan.
  • Press the meat firmly into the pan.
  • Turn the meat mixture out onto a sheet pan that has been lined with aluminum foil.
  • Bake at 350F degrees for 40 minutes.
  • Pour the sauce over the top of the meatloaf, spread with a spoon to cover the top.
  • Continue to bake, 15 to 20 minutes longer until meatloaf is done.
  • Internal temperature should reach 160 degrees.
  • Remove pan from oven, set on wire rack to cool and rest for 10-15 minutes.
  • Slice as needed.
  • Enjoy!

2 1/2 lb lean ground beef
2 can(s) 6 oz. each tomato paste
1 c cracker crumbs, whole wheat bread crumbs, or oatmeal
1 medium onion, chopped
1 medium bell pepper, chopped
2 large eggs
2 tsp graulated sugar
1 c evaporated milk
1/2 c heinz catsup
salt & pepper to taste

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F.In a large bowl, add evaporated milk, tomato paste, eggs and sugar. whisk together till mixed. pour in cracker crumbs or which ever you are using, Add chopped onions and bell pepper.
  • 2. Add Ground beef, and combine together till well mixed. Shape into loaf. GLAZE TOP OF MEAT LOAF WITH CATSUP, and bake in preheated 350 degree F oven.
  • 3. Bake for 1 hour and 10 minutes.
  • 4. NOTE: When ever I make this recipe I have to double the recipe and make 2, as you see in the picture. The recipe ONLY MAKES ONE MEAT LOAF.

2 large eggs, lightly beaten
3/4 cup 2% milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.
