- 1. In a bowl, add ground beef, egg, pickle juice, ketchup, bread crumbs, salt and pepper. With clean hands, dig in and knead ingredients, mixing them well through the beef.
- 2. Form the ground beef into a small loaf, and place into a loaf pan. Using a spoon or fork, make an indented area along the top of the loaf.
- 3. In a separate bowl, add the remaining ketchup and brown sugar. Mix it well to make a sauce, breaking up any chunks of brown sugar.
- 4. With a spoon, spread the "sauce" over the top of the meatloaf. Bake at 375 for 45 to 50 minutes. Serve with organic green beans and baked potato for a hearty and satisfying meal!
