CRISPY BAKED CHICKEN WINGS

Crispy and flavorful baked chicken wings are so easy to prepare and you don't have to bother with all the grease from frying!

Provided by Lauren Allen

Categories     Appetizer

Time 50m

Number Of Ingredients 9

4 pounds chicken wings (, halved at joints, wingtips discarded)
2 Tablespoons baking powder (*aluminum free)
3/4 teaspoon salt
1/2 teaspoon cracker black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/3 cup Frank's Wings Hot Sauce
1 1/2 cups light brown sugar
1 Tablespoon water

Steps:

  • Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
  • Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
  • Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
  • Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
  • Arrange wings, skin side up, in single layer on prepared wire rack.
  • Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.
  • Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.

Time 1h20m

Number Of Ingredients 4

4 lb / 2 kg chicken wings (, cut into wingettes and drumettes (Note 1))
5 teaspoons baking powder (NOT BAKING SODA / BI-CARB SODA!!)
3/4 teaspoon salt
Oil spray

Steps:

  • If you are organised enough, uncover the chicken wings and leave them in the fridge for a few hours to dry out. Otherwise, use a paper towel to pat the wings dry.
  • Adjust oven racks to upper-middle and lower-middle positions.
  • Preheat oven to 250F/120C (all oven types - standard/convection/fan).
  • Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with oil spray.
  • Place wings in a large bowl or in a ziplock bag. Add the baking powder and salt, then toss to coat evenly.
  • Place the wings on the baking tray in a single layer with the skin side up. They should just fit snugly. They will shrink when they cook because the fat renders out so don't worry if they look too snug.
  • Place wings on the lower middle oven rack and bake for 30 minutes.
  • Move wings up to the upper middle rack and increase the oven temperature to 425F/220C. Bake for 40 - 50 minutes, rotating the tray halfway through.
  • Remove baking tray from the oven and let it stand for 5 minutes.
  • Toss wings in sauce of choice or serve it on the side to dip / drizzle on the wings, then serve.

Time 50m

Yield Serves 4 as an appetizer

Number Of Ingredients 12

1 1/2 teaspoons cumin
1 1/2 teaspoons fennel seed
1 tablespoon plus 1 teaspoon coriander seed
4 1/2 dried Thai bird chilies
1 cup kecap manis (sweet Indonesian soy sauce), preferably ABC brand
1/2 cup fish sauce
1/2 cup light soy sauce
1/2 cup sugar
1 tablespoon red food coloring, optional
1 1 1/2 -inch piece ginger, peeled and thinly sliced
3 cloves garlic, thinly sliced
12 whole chicken wings, about 2 1/2 pounds

Steps:

  • In a small sauté ; pan over low heat, toast the cumin, fennel seed, coriander seed and chilies, then grind them in a spice (or coffee) grinder.
  • In a large bowl, combine the kecap manis, fish sauce, soy sauce, sugar and food coloring, if using. Add the ground spices, ginger and garlic. Stir until the sugar has dissolved. Put the chicken wings in a container large enough to hold the wings and sauce. Pour the sauce over the wings and toss to coat. Place a piece of parchment paper over the wings, then top with a plate to keep them submerged. Refrigerate for 24 to 48 hours, stirring occasionally.
  • Preheat the oven to 375 degrees. Place a wire rack on a parchment-lined baking sheet. Lay the wings, skin side down, on the rack. Cook for 20 to 25 minutes.
  • Bring the marinade to a boil in a heavy-bottomed saucepan. Lower the heat and simmer until it reduces by about half into a thick glaze. Strain through a fine sieve into a large bowl. Add half of the aromatics in the sieve back into the glaze and stir. Toss the cooked wings in the glaze.

Tips:

  • To ensure your chicken wings are crispy, make sure they are completely dry before baking. Pat them dry with paper towels or let them air dry for a few minutes.
  • For extra flavor, marinate the chicken wings in your favorite sauce or marinade for at least 30 minutes before baking. You can use a simple combination of olive oil, garlic powder, and paprika, or try a more complex marinade with ingredients like soy sauce, honey, and ginger.
  • To ensure even cooking, make sure the chicken wings are spread out in a single layer on the baking sheet. Avoid overcrowding the pan, or the wings will not cook evenly.
  • Keep an eye on the chicken wings while they are baking. The cooking time will vary depending on the size of the wings and how crispy you want them to be. Start checking the wings for doneness about 10 minutes before the end of the cooking time.
  • Once the chicken wings are cooked through, remove them from the oven and let them cool for a few minutes before serving. This will help the juices to redistribute and make the chicken even more flavorful.

Conclusion:

Maggi baked chicken wings are a delicious and easy-to-make appetizer or snack. With just a few simple ingredients and a little bit of time, you can create a flavorful and crispy snack that the whole family will love. Serve the chicken wings with your favorite dipping sauce, such as ranch dressing, blue cheese dressing, or honey mustard. You can also enjoy them as a main course with a side of roasted vegetables or mashed potatoes.
