1 cup salsa, store-bought or homemade
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves
1 (15-ounce) can black beans, drained and rinsed
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese

Steps:

  • Preheat oven to broil. Lightly oil an 8×8 or 2 quart baking dish or coat with nonstick spray. In a large saucepan of 2 cups water, cook rice according to package instructions. 1 cup uncooked brown rice
1 can (16 ounces) kidney beans, rinsed and drained
1 large onion, chopped
1 tablespoon canola oil
1 can (14-1/2 ounces) diced tomatoes and green chilies, undrained
2 teaspoons chili powder
1/4 teaspoon salt
1-1/4 cups shredded reduced-fat cheddar cheese, divided

Steps:

  • Cook rice according to package directions. Transfer to a large bowl; add the beans. In a nonstick skillet, saute onion in oil for 4-5 minutes. Stir in the tomatoes, chili powder and salt.
