Our family loved eating at Luby's when we were growing up. I always got their mac & cheese along with the fried fish. Yum! :)

2 c dry elbow macaroni
2 Tbsp nonfat dry milk
2 Tbsp all pourpose flour
1 Tbsp butter or margarine, melted
1 1/4 c boiling water
3 c shredded yellow american cheese from the deli
1/4 tsp salt

Steps:

  • 1. Cook macaroni according to package directions. Drain.
  • 2. Heat oven to 350.
  • 3. In large bowl, mix dry milk, flour, and butter. Gradually add boiling water, wisking constantly. Add 1 1/2 cups of cheese and continue to wisk until smooth & creamy.
  • 4. Stir in macaroni, 1 cup of the remaining cheese, and salt. Transfer to a lightly greased 2-Quart baking dish. Cover with foil. Bake for 25 minutes.
  • 5. Remove foil. Sprinkle with remaining 1/2 cup cheese. Continue baking 1 minute or until cheese melts.

1 lb spaghetti, broken in half
1 (16 ounce) bottle Italian dressing
1 tablespoon parmesan cheese
1 tablespoon sesame seeds
1 tablespoon poppy seed
2 teaspoons seasoning salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 medium cucumber, diced
1 medium red onion, diced
2 medium tomatoes, diced
parsley (to garnish)

Steps:

  • Cook spaghetti according to package directions.
  • Drain, rinse with cold water, and drain well.
  • Transfer to large bowl.
  • In medium bowl, whisk together salad dressing, cheese, seeds, salt, paprika, garlic powder, and peppers until well blended.
  • Stir in cucumber, onion, and tomatoes.
  • Pour over spaghetti and toss lightly to coat evenly.
  • Cover and refrigerate at least 2 hours or up to 24 hours.
  • Garnish with parsley.

Used to love to go to Luby's and have the pasta salad. My mom had a friend that worked as one of the cooks there and she gave my mom the recipe. As far as I know, my mom didn't change it. Still tastes yummy.

FOR MAYO, SUGAR, SALT AND PEPPER TO YOUR LIKING AND ARE APPROXIMATE
1 lb macaroni, elbow
2 c mayonnaise
2 celery stalks, chopped
1/2 medium red onion
2 tsp sugar
salt and pepper to taste

Steps:

  • 1. cook and drain pasta.
  • 2. quickly cool down pasta by placing colander into a bowl of ice water and stir to stop cooking process and drain well. (otherwise salad will be too runny)
  • 3. in a big bowl, mix mayo and sugar and mix completely. If want to skip this step, use Miracle Whip. Add celery, onion and pasta (that is WELL drained). Stir together until mixed. May have to add more mayo. If using miracle whip, try to use mayo for the additional moisture otherwise it turns out too sweet.
  • 4. Chill for 2 hrs at least. Enjoy

1 medium green cabbage, shredded (about 2 pounds)
1 cup thinly sliced dill pickle
1/2 cup short thin strips green bell pepper
1/4 cup coarsley chopped fresh parsley
1/4 cup thinly sliced green onions with top
1/3 cup shredded carrot
1 tablespoon finely chopped red bell peppers or 1 tablespoon pimentos
1/2 cup water
1/3 cup pickle juice (juice from jar of pickles)
1/4 cup vinegar
1 tablespoon granulated sugar
1 tablespoon vegetable oil
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a large bowl, combine cabbage, pickles, green bell pepper, parsley, green onions, carrots and red pepper.
  • For dressing, combine water, pickle juice, vinegar, sugar, oil, salt and pepper.
  • Whisk until well blended.
  • Pour dressing over cabbage mixture and toss lightly to coat evenly.
  • Cover and refrigerate at least 2 hours, tossing lightly serveral times.
  • ~NOTE~To shredded cabbage the Luby's way (for slaw that is easy to eat) cut cabbage in half lengthwise and remove core.
  • Cut crosswise into 1/8-inch slices into 2-inch lengths.
