I got this recipe on another website but made it my own. It works with any fruit puree; I've tried apple and cantaloupe and banana. They are so good! I want to try pumpkin with pumpkin spice instead of cinnamon, YUM!

1/4 cup sugar
1 1/4 cups whole wheat flour
1/3 cup applesauce
1 teaspoon cinnamon
2 cups bran flakes
1 1/2 cups skim milk
1 1/3 teaspoons baking powder
2 egg whites

Steps:

  • Mix bran flakes and milk and set aside for 15 minutes.
  • Mix all of the other ingredients together, then add the bran mixture when it has sat for 15 minutes.
  • Pour into 12 muffins.

3 cups Fiber One cereal
3/4 teaspoon salt
1 cup boiling water
2 cups fat free Greek yogurt (or sour cream)
1 1/2 cups sugar substitute
1 cup mashed ripe banana (or canned pumpkin, or apple sauce)
1/2 cup egg beater egg substitute (2 egg whites)
2 1/2 cups whole wheat flour
3 teaspoons baking soda

Steps:

  • Mix water and yogurt and pour over cereal and salt, mix and let soak.
  • Mix sugar, eggs and banana. Add to cereal mix.
  • Mix flour and baking soda, add to cereal mix.
  • Bake at 375 degrees for 15-20 minute.

1/2 cup unprocesed bran
1/2 cup buttermilk
2 tablespoons butter, melted
2 tablespoons brown sugar
1 large egg, at room temperature
3 tablespoons unsulfured molasses
1/2 teaspoon orange zest
1/4 teaspoon vanilla extract
1/2 teaspoon kosher salt
3/4 cup all purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/4 cup rasins, plumped in warm water and then drained well, if dry
1/2 cup large-diced bananas (1/2 large banana)
1/4 cup chopped walnuts

Steps:

  • Position an oven rack in the center of the oven and preheat the oven to 350F degrees.
  • Line 6 cup muffin tin with paper liners.
  • In a large bowl, combine the bran and buttermilk and let sit for 5 minutes. Stir in the butter, brown sugar, egg, molasses, orange zest, vanilla and salt until well blended.
  • In a separate bowl, whisk together the flour, baking powder, and baking soda until well combined.
  • Add the flour mixture to the buttermilk mixture and stir just until combined. Don't over mix it or your muffins will be tough! Gently fold in the bananas, raisins and walnuts with a rubber spatula.
  • With an ice cream scoop or large spoon, evenly divide the batter amongst the six muffin cups, filling them till full.
  • Bake for 25 to 30 minutes, until a cake tester or toothpick inserted in the center comes out clean.
  • Remove from the oven and place the muffin tin on a rack to cool. Let the muffins cool in the pans. When cool, gently remove them to a plate.

A healthier variation of my Recipe #101530. I have found they are a perfect WW 2 Points Plus snack after a workout. (They are 3 points plus with the oats added.) They also are very good for keeping your system regular when you are limiting your fat intake. ;) You can keep the batter in the refrigerator for several days and bake them as you need them, but they also freeze really well. (If you don't have fat free buttermilk, place 2 Tbls. of vinegar or lemon juice in a measuring cup then add low fat milk until it totals 2 cups altogether.) Sometimes I get bored with the original plain muffins and add some or all of the optional ingredients. I've also started adding 1 cup of old fashioned oats to mimic nuts in the muffins. They are delicious with WW's cream cheese on them too. PLEASE NOTE: wheat bran is NOT cereal. I buy mine at the bulk food store, and it looks like sawdust. Oat bran can be used in its place but the muffins aren't as tasty IMHO.

1 Tbsp cinnamon
1 c blueberries or raisins or any fruit you like

Steps:

  • 1. Preheat oven to 375 and line muffin pan with paper muffin liners.
  • 2. Combine wheat bran and milk and let sit for 10 minutes. If using raisins, put them in warm water to soak. It makes them plump up.
  • 3. Combine applesauce, brown sugar, egg and vanilla extract. Mix well.
  • 4. Combine wheat bran mixture with applesauce mixture.
  • 5. Sift dry ingredients (flour, baking soda, baking powder, salt & cinnamon).
  • 6. Combine everything together until blended. Add fruit.
  • 7. Scoop mixture evenly into muffin cups. Bake for 20 minutes or until muffins springs back from light touch.
  • 8. Remove muffins from muffin pan to cooling rack for about 5 minutes. Unless eating right away, store warm (not hot) muffins in a plastic container and put in the fridge.
  • 9. 30 seconds in the microwave make them perfect the next morning (if there are any left the next morning) Enjoy!
