Time 38m

Number Of Ingredients 18

2 ¼ cups (292 g) all-purpose flour
½ cup (100 g) granulated sugar
¼ cup (50 g) brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
3/4 cup (180 ml) buttermilk, at room temperature
½ cup (113 g) unsalted butter, melted and cooled
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 cup (130 g) diced apple, any variety
2/3 cup (86 g) all-purpose flour
1/3 cup (70 g) light brown sugar, packed
½ teaspoon ground cinnamon
1/4 cup (56 g) unsalted butter, melted
1 ½ cups (180 g) confectioners' sugar
2-3 tablespoons apple cider, or apple juice

Steps:

  • Position the oven rack to the middle position and preheat to 400°F. Line a standard 12-cup muffin tin with paper liners; set aside.
  • In a large bowl, whisk the flour, both sugars, baking powder, baking soda, cinnamon, and salt, cinnamon until well combined. Make a "well" in the center of the dry ingredients.
  • In a liquid measuring cup, beat the buttermilk, butter, egg, and vanilla together until combined. Pour into the center of the dry ingredients and stir just until a few streaks of flour remain. Gently stir in the apple.
  • Divide evenly among the muffin tin cups, filling the cups only 2/3 full.
  • In a small bowl, whisk the flour, brown sugar, and cinnamon. Use a fork to stir in the butter until the mixture is coarse and crumbly. Sprinkle streusel over each muffin, gently pressing into the batter.
  • Bake 12-15 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  • Cool the muffins for 5 minutes in the pan then transfer to a wire rack to cool completely.
  • Top with glaze and serve immediately. Muffins are best the day they are made but they can be stored for later use, see make-ahead tips in the notes below.
  • Whisk the confectioners' sugar and apple cider together until smooth. Use only enough cider to make the glaze pourable.

LOW-FAT APPLE SPICE MUFFINS

Low-Fat Apple Spice Muffins image

What I like the most about these muffins is that the spices make the muffin what it is. The raw cane sugar and whole wheat pastry flour are the best to use because they are the least processed ingredients available and retain more of their natural goodness. The chunky apple bits give me more for my bite and add another level of sweetness to the muffin. These make a great breakfast or brunch item, or you can have one with a cup of coffee and unwind! Enjoy!

LOW FAT APPLE BRAN MUFFINS

Low Fat Apple Bran Muffins image

I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.

Tips:

  • Prep your ingredients in advance: Measure and gather all the ingredients before you start baking to ensure a smooth and efficient process.
  • Use ripe apples: Ripe apples provide a sweeter and more flavorful muffin. Granny Smith or Honeycrisp apples are excellent choices due to their tartness and ability to hold their shape during baking.
  • Don't overmix the batter: Overmixing can result in tough muffins. Mix just until the ingredients are combined, and be gentle when folding in the apples.
  • Make sure your oven is preheated: A preheated oven ensures that the muffins bake evenly and rise properly.
  • Don't overfill the muffin cups: Fill the muffin cups no more than ⅔ full to prevent overflowing during baking.
  • Bake until a toothpick inserted into the center of a muffin comes out clean: This indicates that the muffins are done baking.
  • Let the muffins cool before serving: Allow the muffins to cool for at least 10 minutes before serving to prevent them from falling apart.
