1/2 cup sugar
1/3 cup canola oil
1 large egg, room temperature
1/2 cup plus 2 tablespoons all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt

3/4 cup chopped peeled mango
1/4 cup chopped pecans

Steps:

  • In a small bowl, beat the sugar, oil and egg until well blended. In another bowl, combine the flour, baking powder, salt, cinnamon and nutmeg; gradually beat into sugar mixture and mix well. 425 g mangoes, drained and pureed in a blender
2 -3 tablespoons Splenda sugar substitute
1 teaspoon vanilla essence
2 egg whites
1 egg yolk
1/2 ounce low-fat margarine

  • Preheat the oven. I do mine to 160 degrees but it is fan-assisted, so if yours isn't I would do 180 or even 200.
  • Use the low-fat spread to grease an 8-inch loaf tin.
  • In a large bowl, whisk the egg-whites to a froth.
  • In another bowl, stir the flour, mango puree, vanilla essence and egg yolk together.
  • Fold the whisked whites into this mixture.
  • Pour into the greased tin and bake for 30-40mins.
  • Let cool, then slice.

1 (18.25 ounce) box yellow cake mix
3 eggs
½ cup water
¼ cup vegetable oil
2 tablespoons lime zest
1 tablespoon butter, melted
½ lime, juiced
1 tablespoon golden rum
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Peel mango with a vegetable peeler or paring knife. Cut flesh into small pieces and squeeze pit for juice. Collect all juice from chopping and squeezing pit and reserve for glaze. Smash mango in a bowl using a potato masher or fork. Measure 1 cup smashed mango, reserving the rest for the glaze.
  • Beat 1 cup smashed mango, cake mix, eggs, water, vegetable oil, and lime zest together in a bowl using an electric mixer for 2 minutes; pour into the prepared pan.

9 whole graham crackers
1/4 cup sliced almonds
1 tablespoon light brown sugar, packed
1/8 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, melted and cooled slightly
3/4 cup heavy cream, chilled
8 ounces cream cheese, at room temperature
1 cup full-fat or low-fat mango Greek yogurt, well-stirred
1/2 cup confectioners' sugar, sifted
1 small ripe mango, peeled and finely diced (about 1 1/2 cups)

Steps:

  • Spray a 9-by-9-inch straight-sided cake pan with cooking spray, and then line with 2 pieces of parchment paper that overlap each other, leaving at least 1-inch of overhang on each side of the pan.
  • Add the graham crackers, almonds, brown sugar and salt to a large plastic resealable bag. Seal the bag, and then use a rolling pin to crush into fine crumbs. Add the butter, close the bag again and use your hands to thoroughly mix the butter into the crumbs. Press the crumbs into the bottom of the prepared pan and use a metal spatula to press the crust firmly into the corners. Place in the freezer while you prepare the filling.
  • Whip the heavy cream in a large bowl with an electric hand mixer until stiff peaks form. Combine the cream cheese, yogurt and confectioners' sugar in a medium bowl. Beat with the hand mixer until the mixture is completely smooth, light and fluffy. Fold the whipped cream in thirds into the cream cheese mixture, folding until just combined.
  • Spoon the cream cheese mixture onto the graham cracker crust and use an offset spatula to smooth out the top. Sprinkle evenly with the mango pieces, and then use your hands to gently press the mango into the top of the cheesecake. Put in the freezer for 1 hour to set.
  • Use the parchment paper to carefully lift the cheesecake out of the pan and transfer to a cutting board. Cut into 9 to 12 pieces and serve immediately.
