LOW FAT (BUT TASTY!) BUTTERMILK APPLE BRAN MUFFINS WW FRIENDLY

Low Fat (But Tasty!) Buttermilk Apple Bran Muffins Ww Friendly image

A healthier variation of my Recipe #101530. I have found they are a perfect WW 2 Points Plus snack after a workout. (They are 3 points plus with the oats added.) They also are very good for keeping your system regular when you are limiting your fat intake. ;) You can keep the batter in the refrigerator for several days and bake them as you need them, but they also freeze really well. (If you don't have fat free buttermilk, place 2 Tbls. of vinegar or lemon juice in a measuring cup then add low fat milk until it totals 2 cups altogether.) Sometimes I get bored with the original plain muffins and add some or all of the optional ingredients. I've also started adding 1 cup of old fashioned oats to mimic nuts in the muffins. They are delicious with WW's cream cheese on them too. PLEASE NOTE: wheat bran is NOT cereal. I buy mine at the bulk food store, and it looks like sawdust. Oat bran can be used in its place but the muffins aren't as tasty IMHO.

I got this recipe on another website but made it my own. It works with any fruit puree; I've tried apple and cantaloupe and banana. They are so good! I want to try pumpkin with pumpkin spice instead of cinnamon, YUM!

LOW FAT APPLE BRAN MUFFINS

Low Fat Apple Bran Muffins image

I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.

SUPER YUMMY LOW FAT BRAN MUFFINS

Super Yummy Low Fat Bran Muffins image

These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious. Adding raisins make them tasty too. Got this one off of the Kraft website.

UPPER CRUST BAKERY APPLE-BRAN MUFFINS

Upper Crust Bakery Apple-bran Muffins image

This is an adaptation of a recipe from the Upper Crust Bakery, in Cambria Pines, California; which is located just off the Central California Coast, near Hearst Castle. I visited the bakery several years ago, and had these bran muffins. They are the best I've tasted and are healthful to boot. There were so many requests that the recipe was published in the local newspaper. Don't be too put off by the long list of ingredients; the batter can be kept refrigerated for about a week before you bake them; and it does make 24 muffins. Also they freeze well. The're worth the extra effort for a special occasion.

Time 1h30m

Yield 24 serving(s)

Number Of Ingredients 23

1 cup brown sugar, packed
3/4 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
2 1/2 cups of pure natural bran
1 1/2 cups rolled oats
1 cup bread flour
1 1/3 cups stone ground whole wheat flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2/3 cup oil
1/2 cup honey
1/4 cup molasses
1 teaspoon vanilla
4 large eggs
2 (8 ounce) cartons yogurt
1 cup buttermilk
1/2 cup applesauce
1/4 cup apple cider
1/2 cup dried apple, diced
1/2 cup chopped walnuts (optional)
1/2 cup raisins (optional)
1/2 lemon, rind of

Steps:

  • In a large bowl blend together the first ten (dry) ingredients.
  • In a separate bowl, combine the remaining ingredients (wet ingredients), and mix well.
  • Add the wet ingredients to the bowl with the dry ingredients, and mix until the dry ingredients are just moistened.
  • Do not overmix.
  • Refrigerate batter overnight.
  • Muffin batter can be kept refrigerated for about 1 week.
  • To bake, spray the top of the muffin pan (s) with non-stick spray.
  • Line the cups with paper liners.
  • Fill each cup to the rim with muffin batter.
  • Bake at 400 degree F.
  • 25-30 minutes.
  • Muffins are done when firm and just lightly colored around edges.
  • The tops will overflow when baked to meet other muffins.
  • Cut apart to serve.
  • For standard size muffins, fill cups 2/3 full.
  • Brush tops with warm honey, if desired, while still warm.
  • Makes about 24 muffins.

Tips:

  • Choose ripe apples: Ripe apples provide a natural sweetness and juiciness to the muffins.
  • Use a variety of apples: Experiment with different types of apples to create unique flavor combinations. Mixing tart and sweet apples creates a balanced taste.
  • Don't overmix the batter: Overmixing can result in tough muffins. Mix just until the ingredients are combined.
  • Fill the muffin cups properly: Fill each muffin cup about 2/3 full to allow room for the muffins to rise.
  • Don't overbake the muffins: Overbaking can dry out the muffins. Check for doneness by inserting a toothpick into the center of a muffin. If it comes out clean, the muffins are ready.

Conclusion:

These low-fat buttermilk apple bran muffins are a delicious and healthy way to start your day. They are packed with flavor from the apples, bran, and spices, and they are also low in calories and fat. Enjoy these muffins as a quick breakfast or snack, or pack them for lunch.
