Time 30m

Yield 6 serving(s)

Number Of Ingredients 12

3 (6 ounce) cans tuna (drained and flaked)
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 tablespoons mayonnaise
1/4 cup sour cream
2 tablespoons celery (chopped, about 1 stalk)
1 tablespoon onion (diced)
1/2 cup green beans (I use the canned kind)
1 cup cheddar cheese
1/2 cup French's French fried onions
1 tablespoon butter

Steps:

  • Heat a sauté pan on medium high. Melt the butter and add the celery and onion. Sauté for 5-6 minutes until the onions are translucent.
  • Place onions and celery in a mixing bowl. Add in the tuna, mayonnaise, sour cream, salt, pepper, garlic powder and green beans. Mix to combine.
  • Pour the tuna into a greased casserole dish. Cover the casserole with cheese and then sprinkle the french fried onions on top.
  • Bake on 375°F for 20 minutes.

Tips:

  • Choose the Right Tuna: Opt for tuna packed in water or olive oil for a healthier option, avoiding tuna packed in oil as it can be high in unhealthy fats.
  • Prepare the Cabbage Noodles: To make the cabbage noodles, finely shred the cabbage using a food processor or mandoline. You can also use a sharp knife to thinly slice the cabbage.
  • Season the Casserole: Don't be afraid to adjust the seasonings to your taste. Add more garlic, onion, salt, and pepper if desired, or experiment with other herbs and spices like paprika, cumin, or oregano.
  • Control the Moisture: If you find that the casserole is too dry, add a splash of chicken broth or water. Alternatively, if it's too moist, sprinkle some almond flour or grated Parmesan cheese on top and bake for a few more minutes.
  • Serve with Your Favorite Sides: This low-carb tuna casserole pairs well with a variety of sides. Consider roasted vegetables, a side salad, or mashed cauliflower for a complete meal.

Conclusion:

This low-carb tuna casserole with cabbage noodles is a delicious and nutritious dish that's perfect for a quick and easy weeknight meal. With its combination of protein, healthy fats, and fiber, it's a satisfying and guilt-free option for those following a low-carb or keto diet. So, gather your ingredients, preheat your oven, and get ready to indulge in this flavorful and satisfying casserole!
