Time 1h30m

Number Of Ingredients 13

1 large yellow onion, cut into 2-inch pieces
1 large carrot, cut into 2-inch pieces
1 tablespoon extra-virgin olive oil or canola oil
2 cups sauerkraut, drained and squeezed dry
1 cup diced Swiss cheese
4 tablespoons ketchup, divided
1 tablespoon caraway seeds
¼ teaspoon salt
1 large egg, lightly beaten
¾ cup fresh breadcrumbs, preferably from Jewish rye bread (see Tip)
2 pounds lean (90% or leaner) ground beef
3 tablespoons low-fat mayonnaise
½ cup chopped dill pickles

Steps:

  • Preheat oven to 375 degrees F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation).
  • Pulse onion and carrot in a food processor until finely chopped. (Or finely chop them with a knife.)
  • Heat oil in a large nonstick skillet over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender and most of the liquid has evaporated, 5 to 10 minutes. Transfer to a large bowl and let cool for 10 minutes.
  • Add sauerkraut, cheese, 2 tablespoons ketchup, caraway seeds and salt to the vegetables; stir to combine. Stir in egg and breadcrumbs. Add ground beef and with clean hands gently knead the vegetable mixture into the meat; do not overmix. Pat the meat mixture into a loaf shape (about 12 by 5 inches) on the prepared baking sheet. Combine the remaining 2 tablespoons ketchup and mayonnaise in a small bowl. Spread on the loaf.
  • Bake the meatloaf until an instant-read thermometer inserted in the center registers 165 degrees F, about 45 minutes. Sprinkle with chopped pickles. Let rest for 10 minutes before slicing.

REUBEN MEATLOAF

Reuben Meatloaf image

If you like sauerkraut and corned beef you will like this meatloaf. It is very yummy. From: Recipe-Source

Provided by gwynn

Categories     Cheese

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 9

1 lb ground beef
1 cup soft breadcrumbs
1/2 cup thousand island dressing
1 egg
1/2 teaspoon caraway seed
1/4 teaspoon pepper
8 ounces sauerkraut
1 ounce corned beef, chopped (from can)
1/2 cup swiss cheese, shredded

Steps:

  • Combine all ingredients except last 3 in medium bowl.
  • Press 1/2 of mixture in bottom of loaf pan.
  • Make slight indentation, lengthwise down center of meatloaf.
  • Combine all the filling mixture and put in indentation.
  • Top with remaining meat mixture, pressing to enclose filling and sealing edges.
  • Bake at 350 degrees for approximately 1 hour.
  • Let stand for 5 minutes.

Tips:

  • Use a variety of meats. Ground beef is the most common meat used in meatloaf, but you can also use ground turkey, pork, lamb, or even venison. Mixing different meats together can create a more flavorful and moist meatloaf.
  • Add moisture. Meatloaf can be dry, so it's important to add some moisture to the mixture. You can do this by adding eggs, milk, bread crumbs, or vegetables. You can also wrap the meatloaf in bacon before baking it, which will help to keep it moist and juicy.
  • Season the meatloaf well. Use a variety of spices and herbs to flavor the meatloaf. Some popular choices include garlic, onion, salt, pepper, paprika, cumin, and oregano. You can also add a bit of brown sugar or molasses to add a touch of sweetness.
  • Cook the meatloaf at a low temperature. Meatloaf should be cooked at a low temperature (350 degrees Fahrenheit or 175 degrees Celsius) for a long period of time (about 1 hour per pound). This will help to prevent the meatloaf from drying out.
  • Let the meatloaf rest before slicing. Once the meatloaf is cooked, let it rest for at least 10 minutes before slicing. This will help the juices to redistribute throughout the meatloaf, making it more tender and flavorful.

Conclusion:

Low-carb Reuben meatloaf is a delicious and satisfying dish that is perfect for a low-carb or ketogenic diet. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can create a moist, flavorful, and juicy meatloaf that your whole family will enjoy.
