LOW CARB JALAPENO POPPERS

Low Carb Jalapeno Poppers image

I was craving poppers but didn't want super greasy bacon or high carb breading so I invented these... Sometimes instead of the garlic powder and seasoning salt, I use 2 tsp of a product called Johnny's Garlic Spread Seasoning which is just awesome - I buy it at Costco here in Canada. The number of jalapenos varies depending on the size you get and how much spread you put inside each half! Tried it with fat-free cream cheese and it just didn't have a good texture. Have also used shredded taco cheese blend right out of the freezer instead of plain cheddar!

Time 20m

Yield 16 poppers, 8 serving(s)

Number Of Ingredients 6

8 jalapenos
8 slices prosciutto
4 ounces light cream cheese
1 -2 tablespoon light cheddar cheese, shredded
1 teaspoon garlic powder
1/2 teaspoon seasoning salt

Steps:

  • Preheat oven to 400 F and line a baking sheet with parchment paper.
  • Cut the top of each jalapeno and cut in half lengthwise, then remove the veins and seeds and put aside. Cut each slice of proscuitto in half.

  • Fill each jalapeno half with cream cheese mixture and wrap with half a slice of proscuitto, making sure that you fold it over the cut off top end so that the cream cheese mixture can't escape!

Tips:

  • Choose the right jalapeños: Look for firm, deep green jalapeños that are about 2 to 3 inches long. Avoid any jalapeños that are bruised or have blemishes.
  • Wear gloves when handling jalapeños: Jalapeños contain capsaicin, which can cause a burning sensation on your skin. Wear gloves to protect your hands when cutting, seeding, and stuffing the jalapeños.
  • Remove the seeds and ribs from the jalapeños: This will help to reduce the heat of the jalapeños. To do this, cut the jalapeños in half lengthwise and use a spoon to scrape out the seeds and ribs.
  • Stuff the jalapeños with your favorite fillings: You can use a variety of fillings for your jalapeño poppers, such as cheese, meat, seafood, or vegetables. Some popular fillings include cream cheese, cheddar cheese, bacon, sausage, shrimp, or crab.
  • Bake or fry the jalapeño poppers: You can either bake or fry your jalapeño poppers. If you are baking them, preheat your oven to 400 degrees Fahrenheit. If you are frying them, heat a large skillet over medium heat and add enough oil to cover the bottom of the skillet.
  • Serve the jalapeño poppers hot: Jalapeño poppers are best served hot, so make sure to serve them as soon as they are done cooking.

Conclusion:

Low-carb jalapeño poppers are a delicious and easy-to-make appetizer that is perfect for any occasion. They are also a great way to use up leftover jalapeños. With so many different variations, you can find a recipe that everyone will enjoy. So next time you are looking for a tasty and low-carb snack, give these jalapeño poppers a try.
