4 tablespoons butter
1 onion, thinly sliced and quartered
4 cloves garlic, minced
4 tablespoons all-purpose flour
2 cups beef broth
1 ½ cups sliced baby bella mushrooms, or more to taste
1 tablespoon chopped fresh parsley
4 center-cut pork chops
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
cooking spray

Steps:

  • Melt butter in a 3-quart saucepan over medium-low heat. Cook onion and garlic in the butter, stirring occasionally, until is browned, 7 to 10 minutes. Remove onion and garlic and set aside.
  • Stir flour slowly into butter. Cook over low heat, stirring constantly, until flour is deep brown, 7 to 10 minutes. Remove from heat. Gradually stir in broth. Add onion, garlic, mushrooms, and parsley. Bring to a boil, stirring constantly. Remove from heat.
  • Coat a large skillet with cooking spray and heat over medium-high heat. Season pork chops with salt and pepper and brown in the hot pan, 5 to 7 minutes per side. 4 oz smoked sausage, chopped
3 Tbsp all-purpose flour
1 tsp salt
1/2 tsp pepper
4 bone-in center-cut pork chops, 1.25" thick
3 Tbsp vegetable oil
1 pkg gumbo frozen vegetable mix, 16 oz (mix of onion, celery, and bell pepper)
1 can(s) chicken broth, 14 oz
1/2 tsp dried thyme
1 Tbsp corn starch
2 Tbsp water
hot cooked rice
4 green onions, sliced
hot sauce (optional)

Steps:

  • 1. Saute sausage in a large skillet over medium-high heat until browned.
  • 2. Drain sausage, reserving drippings in pan.
  • 3. Combine flour, salt, and pepper in a large Ziploc bag; add pork chops. Seal bag and shake to coat.

Here in South Louisiana, we "smother" just about everything. No, we don't put a blanket or something over our food to "smother" it! We just keep the cover of the pot almost all the way on. It's best cooked in a heavy, seasoned cast iron dutch oven, which is a must have, in my opinion. The meat is cooked in a natural gravy. I personally like my food on the spicy side. It's "fall off the bone" tender! So, put a pot of rice on! :)

3 tablespoons olive oil
6 bone in pork chops
your favorite cajun seasoning
1 large onion, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 stalk celery, finely chopped
water
6 garlic cloves, minced
2 tablespoons Worcestershire sauce
8 ounces sliced mushrooms
1/2 cup green onion, sliced
