Time 50m

Yield 4 serving(s)

Number Of Ingredients 12

1/4 cup oil
1/4 cup flour
1 lb shrimp, peeled and deveined (raw)
1 garlic clove, minced
1/2 cup minced onion
2 tablespoons minced parsley
1 cup water
2 teaspoons salt (I use only 1 tsp salt)
2 bay leaves
1/2 teaspoon cayenne pepper
1 (8 ounce) can tomato sauce
1/2 cup chopped bell pepper (green)

Steps:

  • combine flour and oil in a 5 quart heavy pot, making a medium brown roux on high heat. Stir constantly so as not to burn the roux.
  • Lower heat, add shrimp and cook for about 3 minutes.
  • Add garlic, onion, bell pepper, and parsley. Continue to cook for 2 minutes to wilt onions.
  • Raise heat, add water and remaining ingredients. Bring to boil.
  • Lower heat to simmer, covered, for 20 to 30 minutes.
  • Serve over rice. Corn or peas are great sweet vegetables on the side of this tomato based gravy. We always have peas and potato salad with this meal. Hope you enjoy it as much as we have!

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and avoid scrambling while you're cooking.
  • Use Fresh Seafood: For the best flavor, use fresh shrimp that are firm and have a slightly briny smell. Avoid shrimp that are mushy or have a strong fishy odor.
  • Don't Overcook the Shrimp: Shrimp cook quickly, so it's important to not overcook them. Overcooked shrimp will become tough and rubbery.
  • Use a Good Quality Creole Seasoning: Creole seasoning is a blend of spices that is essential for this dish. Make sure you use a good quality seasoning that has a good balance of flavors.
  • Adjust the Spice Level: This recipe is moderately spicy, but you can adjust the spice level to your liking by adding more or less cayenne pepper.
  • Serve with Rice: Louisiana Shrimp Creole is traditionally served with rice. You can use white rice, brown rice, or even cauliflower rice.

Conclusion:

Louisiana Shrimp Creole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's packed with flavor and is sure to be a hit with your family and friends. So next time you're looking for a quick and easy seafood dish, give this recipe a try.
