1 teaspoon Italian seasoning, divided
2 pounds ground pork
1/4 cup ketchup

Steps:

  • In a large bowl, combine the eggs, bread crumbs, milk, 1/2 cup cheese, onion, Worcestershire sauce, garlic salt and 1/2 teaspoon Italian seasoning. Crumble pork over mixture and mix well. 14 ounces pasta sauce, DIVIDED (I used 2 cups home made)
1/4 cup seasoned dry bread crumb, fine
1/4 teaspoon salt
1/4 teaspoon black pepper
12 ounces ground beef
2 ounces mozzarella cheese (I used 2 sticks string cheese) or 2 sticks mozzarella string cheese (I used 2 sticks string cheese)
4 slices prosciutto (about 2 ounces)
9 ounces spinach fettuccine, Fresh (for big eaters or teens you may want to use more than 9 ounces)

Steps:

  • Preheat oven to 400°F In a medium bowl combine egg, 1/4 cup of the pasta sauce, the bread crumbs, salt, and pepper. Add ground beef; mix well.
  • Cut mozzarella cheese block into four 2 1/4x3/4x1/2 inch logs or cut each string cheese stick in half crosswise. Wrap a lice of prosciutto around each cheese log. Shape one-fourth of the beef mixture around each cheese log to form a loaf. Flatten the four meat loaves to 1 1/2 inches thick and place in a shallow baking pan.
  • Bake for 20 minutes or until internal temperature registers 160 F on an instant-read thermometer. Meanwhile, prepare fettuccine according to package directions; drain well and keep warm. In a small saucepan heat remaining pasta sauce over medium heat until bubbly.

2 teaspoons kosher salt

1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. 1/2 pound 93 percent lean ground turkey
1/2 pound 90 percent lean ground beef
1 large egg
1/2 teaspoon plus 1/8 teaspoon curry powder
Kosher salt and freshly ground pepper
1 tablespoon ketchup
1 tablespoon peach chutney or apricot jam
2 medium red-skinned potatoes, sliced 1/4 inch thick
1 head broccoli (florets cut into pieces, stem peeled and thinly sliced)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F. Pulse the bread in a food processor until finely ground; transfer to a large bowl. Add the onion and carrot to the food processor and pulse until finely chopped. Transfer to the bowl with the bread and add the turkey, beef, egg and 1/2 teaspoon each curry powder, salt and pepper.   • Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.

We have given up all other meat loaf recipes for this one. I love the individual servings and every bite has the yummy catsup sauce where in "regular" meat loaf it's just a small strip on top! With the smaller loaves it also makes the cooking time a bit quicker. This recipe came from '99 TOH magazine but I added the rubbed sage for some extra flavor. Enjoy!

1 cup shredded sharp cheddar cheese (4oz)
1/2 cup quick-cooking oats
1/2 cup chopped onion

2/3 cup catsup
1/2 cup packed brown sugar
1 1/2 teaspoons prepared mustard

Steps:

  • In a bowl, beat the egg and milk.
  • Stir in cheese, oats, onion, salt and rubbed sage.

  • (It will seem runny at first but will thicken up as you mix.) Shape into 8 equal sized loaves (oval/egg shaped) and place in a greased 9X13X2" baking dish.
  • Sauce: Combine catsup, brown sugar and mustard.

½ cup dry bread crumbs
1 (1 ounce) package dry onion soup mix
¼ cup barbecue sauce
1 clove garlic, minced
1 egg
1 tablespoon all-purpose flour

8 thin slices deli ham, or as needed
1 cup shredded Swiss cheese, or as needed
¼ cup ketchup
1 teaspoon mustard
1 tablespoon brown sugar
1 dash soy sauce

  • Preheat oven to 350 degrees F (175 degrees C). Lay a 24-inch long sheet of parchment paper down on a work surface.
