LIL' CHEDDAR MEATLOAVES
We have given up all other meat loaf recipes for this one. I love the individual servings and every bite has the yummy catsup sauce where in "regular" meat loaf it's just a small strip on top! With the smaller loaves it also makes the cooking time a bit quicker. This recipe came from '99 TOH magazine but I added the rubbed sage for some extra flavor. Enjoy!

QUICK AND EASY SICILIAN MEATLOAF
I tried this recipe years ago when I first started cooking. It's been a constant hit since then and is virtually foolproof. Unlike regular meatloaf, this one stays juicy and tender with excellent flavor. Serve with garlic mashed potatoes and steamed carrots for an old fashioned comfort food dinner.

Tips:
- Use a combination of ground meats. This will give the meatloaf more flavor and texture. Good combinations include ground beef and pork, ground beef and lamb, or ground turkey and chicken.
- Season the meatloaf well. Use a variety of herbs and spices, such as garlic, onion, oregano, basil, thyme, salt, and pepper. Adding some grated Parmesan cheese is also a great way to boost flavor.
- Don't overmix the meatloaf. Overmixing can make the meatloaf tough. Just mix the ingredients until they are combined.
- Form the meatloaf into a loaf shape. Place the meatloaf in a baking dish and bake it in a preheated oven. The meatloaf is done when it reaches an internal temperature of 160 degrees Fahrenheit.
- Let the meatloaf rest before slicing. This will help the meatloaf to hold its shape and make it easier to slice.
Conclusion:
Little Sicilian meatloaves are a delicious and easy-to-make dish that is perfect for a family meal. These individual meatloaves are made with a combination of ground beef and pork, and they are seasoned with a variety of herbs and spices.
