LINGUINE PUTTANESCA

It's an oft-told story that puttanesca is named for the "working girls" of Naples who had to throw together a meal quickly between customers. But the sauce was so popular because of its tantalizing aroma that it drew in the clientele! At Patsy's, we serve it with lots of anchovies. - Sal Scognamillo, Patsy's Italian Family Cookbook.

Yield 4

Number Of Ingredients 10

¼ cup olive oil
2 cloves garlic, peeled and finely chopped
1 28-ounce can whole plum tomatoes in juice, undrained
½ cup coarsely chopped pitted kalamata olives
3 tablespoon drained nonpareil capers, rinsed
6 anchovy fillets in oil, drained and finely chopped
1 teaspoon dried oregano
salt and freshly ground pepper
1 pound linguine
freshly grated parmigiano-reggiano cheese, for serving

Steps:

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the oil and garlic until golden, about 2 minutes. Pour the tomato juices into the skillet. As you add the tomatoes, crush them between your fingers. Bring to boil. Add the olives, capers, anchovies, and oregano and reduce the heat to medium-low. Simmer, stirring occasionally, until the mixture has thickened, about 20 minutes. Remove from the heat and cover to keep warm.
  • Add the linguine to the boiling water and cook according to the package directions until al dente. Scoop out and reserve ½ cup of the cooking water. Drain the linguine well and return to its cooking pot.
  • Add the tomato sauce and the reserved pasta water and bring just to a boil over high heat. Season with salt and pepper. Transfer to a large serving bowl and serve hot, with Parmigiano-Reggiano on the side.

PASTA PUTTANESCA

Pasta Puttanesca image

There are almost as many explanations for the origins of pasta puttanesca as there are ways to make it. Ostensibly a sauce invented and made by prostitutes, it was designed to lure customers with its powerful aroma. Whatever the origin, no better cold-weather pasta sauce has come down to us. Puttanesca can be made completely with ingredients from the larder; in fact, it can be prepared entirely without ingredients that require refrigeration, though a bit of a fresh herb at the end does help. The basis is a garlicky tomato sauce; canned tomatoes are preferable here. This is brought to a high level of flavor by the addition of anchovies, capers and olives. Red pepper flakes make things even better. The whole process is ridiculously easy.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your dish. Look for ripe tomatoes, briny olives, and capers, and use a good quality olive oil.
  • Don't overcrowd the pan: When cooking the pasta, be sure not to overcrowd the pan. This will prevent the pasta from cooking evenly and will make it more likely to stick together.
  • Cook the pasta al dente: Al dente pasta is pasta that is cooked through but still has a slight bite to it. This is the ideal texture for pasta puttanesca.
  • Don't rinse the pasta: Rinsing the pasta after cooking will remove the starch, which will make it less likely to absorb the sauce. Instead, drain the pasta and immediately add it to the sauce.
  • Use a variety of olives: Using a variety of olives will add depth and complexity to the flavor of the sauce. Try using a combination of black olives, green olives, and Castelvetrano olives.
  • Add some heat: If you like spicy food, you can add some red pepper flakes or chili pepper to the sauce. This will give it a nice kick.
  • Serve with a sprinkle of cheese: A sprinkle of grated Parmesan or Pecorino Romano cheese is the perfect finishing touch for pasta puttanesca.

Conclusion:

Pasta puttanesca is a delicious and versatile dish that can be made with a variety of ingredients. It's a great option for a quick and easy weeknight meal, and it's also perfect for entertaining guests. Whether you're a novice cook or a seasoned pro, pasta puttanesca is a dish that you'll love.
