NUTTY CARAMEL CORN

Time 40m

Yield about 10 cups

Number Of Ingredients 9

Nonstick cooking spray
3 tablespoons coconut or vegetable oil
Slightly rounded 1/2 cup popcorn kernels
3/4 cup light brown sugar
1/4 cup light corn syrup
6 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup roasted, salted mixed nuts

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with a piece of parchment paper and spray lightly with cooking spray.
  • Put the oil and 3 or 4 popcorn kernels in a large pot with a lid (at least 6 quarts). Cover the pot and turn the heat up to medium-high. Wait until you hear one of the kernels pop, then uncover the pot and add the remaining kernels. Quickly stir everything together then replace the lid. Cook the popcorn until the kernels begin popping and then reduce the heat slightly. Cook, shaking often, until the rate of popping starts to slow, 2 to 3 minutes. Do not wait for all of the kernels to pop or they will burn. Take off the heat.
  • Combine the brown sugar, corn syrup, butter and salt in a medium pot. Heat over medium heat until melted and smooth. Stir in the baking soda.
  • Pour the nuts on top of the popcorn. Then pour the caramel into the pot with the popcorn; stir to coat and spread the popcorn onto the prepared baking sheet.
  • Bake, stirring occasionally, until slightly golden, about 20 minutes. Cool completely, and then break apart before serving.

MISS BROWN'S PEANUT-PISTACHIO CARAMEL CORN

Miss Brown's Peanut-Pistachio Caramel Corn image

Do you remember that caramel corn mixed with peanuts that would come in a small cardboard box and have a toy hidden inside? Well, this is my version, with a Gullah spin. I add a mixture of nuts and sesame seeds (known as benne seeds in Gullah and Low Country cooking) to the buttery, sweet caramel corn.

Provided by Kardea Brown

Time 1h45m

Yield 18 to 20 servings (20 cups)

Number Of Ingredients 12

Nonstick cooking spray, for the baking pans
15 cups popped popcorn (from 1/2 to 2/3 cup unpopped; see Cook's Note)
1 cup salted red-skinned peanuts
1 cup shelled pistachios
2 tablespoons sesame seeds
3/4 cup (1 1/2 sticks) unsalted butter
1 1/2 cups firmly packed light brown sugar
6 tablespoons light corn syrup
1 tablespoon creamy peanut butter
1 1/4 teaspoons fine sea salt
1 teaspoon vanilla extract
3/4 teaspoon baking soda

Steps:

  • Preheat the oven to 200 degrees F. Grease or butter two large, rimmed baking pans. Combine the popcorn, peanuts, pistachios and sesame seeds in a very large bowl or roasting pan.
  • Melt the butter in a medium saucepan over medium heat. Add the brown sugar, corn syrup, peanut butter and salt. Bring to a boil, stirring constantly, then cook until the mixture is completely emulsified and there is no visible melted butter around the edge of the pan, 1 to 2 minutes. Remove from the heat and stir in the vanilla and baking soda. (The mixture will puff up.)
  • Pour the mixture evenly over the popcorn mixture and toss well to coat. Divide the popcorn between the two prepared pans, spreading in an even layer. Bake the popcorn for 1 hour, stirring every 15 minutes and rotating the pans so it cooks evenly. Let cool in the pans, about 20 minutes. Break into pieces to serve.

Tips:

  • Choose the right popcorn kernels. Not all popcorn kernels are created equal. For this recipe, you'll want to use a variety that pops up big and fluffy, such as Amish Country or Jolly Time.
  • Use a large pot or Dutch oven. You'll need a lot of space for the popcorn to pop, so make sure you have a large enough pot or Dutch oven.
  • Don't overcrowd the pot. Add the popcorn kernels in a single layer to the bottom of the pot. If you overcrowd the pot, the popcorn won't pop evenly.
  • Keep the heat on medium-high. You want the popcorn to pop quickly, but not so quickly that it burns.
  • Shake the pot or Dutch oven frequently. This will help to distribute the heat evenly and prevent the popcorn from burning.
  • Listen for the popping to slow down. Once the popping slows down to a few seconds between pops, it's time to remove the pot or Dutch oven from the heat.
  • Pour the popcorn into a large bowl. Add the caramel sauce and nuts, and toss to coat.
  • Serve immediately. Nutty caramel popcorn is best enjoyed fresh.

Conclusion:

Nutty caramel popcorn is a delicious and easy-to-make snack that's perfect for parties, movie nights, or just enjoying at home. With just a few simple ingredients, you can make this sweet and salty treat that's sure to please everyone. So next time you're looking for a quick and easy snack, give nutty caramel popcorn a try.
