Steps:
- Using a vegetable peeler, remove the peel from the lemons in long strips (reserve the lemons for another use). Using a small sharp knife, trim away the white pith from the lemon peels; discard the pith. Place the lemon peels in a 2-quart pitcher. Pour the vodka over the peels and cover with plastic wrap. Steep the lemon peels in the vodka for 4 days at room temperature.
- Stir the water and sugar in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely. Pour the sugar syrup over the vodka mixture. Cover and let stand at room temperature overnight. Strain the limoncello through a mesh strainer. Discard the peels. Transfer the limoncello to bottles. Seal the bottles and refrigerate until cold, at least 4 hours and up to 1 month.
LIMONCELLO LEMON SORBET (WITH OR WITHOUT MINT)
This is the concoction I came up with when I couldn't find quite what I was looking for. It is absolutely foolproof. It's simple, sweet, and tart, with just enough limoncello liqueur. Serve with sprig of mint or fresh berries. Top with limoncello or vodka if desired.

Steps:
- Pour limoncello into a chilled Champagne coupe. Top with prosecco. Serve with rosemary.
Tips:
- Choose ripe lemons: The quality of your lemons will greatly impact the flavor of your Limoncello. Look for lemons that are heavy for their size and have a bright yellow color.
- Use a sharp peeler: When zesting the lemons, use a sharp peeler to avoid getting any of the bitter white pith.
- Let the Limoncello infuse for at least 2 weeks: The longer you let the Limoncello infuse, the more flavorful it will be. You can store it in a cool, dark place for up to 2 months.
- Serve Limoncello chilled: Limoncello is best served chilled. You can either keep it in the refrigerator or freezer until you're ready to serve.
- Use Limoncello in cocktails: Limoncello can be used in a variety of cocktails. Try adding it to a classic gin and tonic or using it as a base for a refreshing summer spritzer.
Conclusion:
Limoncello is a delicious and versatile liqueur that can be enjoyed on its own or used in cocktails. It's a great way to use up leftover lemons, and it makes a lovely gift. With its bright citrus flavor and refreshing finish, Limoncello is a perfect drink to enjoy on a warm summer day. So next time you have some lemons on hand, give Limoncello a try!
