LIME JELLO SALAD
A favorite summertime (or anytime) jello salad of ours. Very refreshing. Great served as an accompaniment to a barbecue or a brunch.

Steps:
- Combine jello and hot water; stir until jello is dissolved.
- Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
- In another bowl, beat the cream cheese. Add pineapple, beating briefly.
- Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.
LIMEADE JELLO
Our family really enjoys the taste of lime, so I made a variation of the Lemonade Jello substituting Limeade. Prep time does not include thickening time.

Steps:
- Put 2 6-oz.
- packages of lime jello into large mixing bowl.
- Add 5 cups of boiling water and stir until jello is melted.
- Stir in the 12-oz.
- can of frozen Limeade concentrate.
- Mix until the Limeade is thoroughly melted.
- Put bowl of jello into the frig until slightly thickened.
- After slightly thickened, add container of thawed Cool Whip.
- Blend with a mixer until creamy.
- Return to the refrigerator until set.
Tips:
- The lime juice in this recipe can be freshly squeezed or bottled. If using freshly squeezed lime juice, strain it before using to remove any pulp or seeds.
- For a tarter limeade jello, add more lime juice or lime zest to taste.
