TEQUILA LIME SYRUP FOR FRUIT SALAD

Tequila Lime Syrup for Fruit Salad image

This is lovely syrup used to brighten up the flavors of a simple fruit salad. The recipe comes to me from the Santa Fe Cooking School and works especially well as a light dessert after a Southwestern meal. The flavors are reminiscent of the popular mojito. I like it best with more tropical fruits like pineapple, mango and banana but find it works very well with summer fruits such as strawberries and grapes. One batch of syrup is plenty for 4-6 cups of fruit. You can prepare this days ahead of time and mix with the salad just before serving.

¼ cup fresh lime juice (about 2 limes)
2 tsp fresh lime zest (about 2 limes)
2 tsp fresh ginger, fine grated
1 ½ cups fresh green grapes, seedless, washed and stems removed

LIME SYRUP

Lime Syrup image

Categories     Sauce     Non-Alcoholic     Cocktail Party     Lime     Gourmet     Drink

Yield Makes 2 1/2 cups.

Number Of Ingredients 2

2 cups sugar
the grated rind from 4 limes

Steps:

  • In a saucepan combine the sugar with 2 cups water, bring the water to a boil over moderate heat, stirring until the sugar is dissolved, and add the lime rind. Cook the syrup, undisturbed, for 10 minutes. Let the syrup cool until it is lukewarm and strain it into a jar, pressing hard on the rind with the back of a spoon. The syrup keeps indefinitely, covered and chilled.

Tips:

  • Choose ripe, juicy limes: The quality of your limes will greatly impact the flavor of your syrup. Look for limes that are deep green in color and feel heavy for their size.
  • Use a citrus juicer: A citrus juicer will make it much easier to extract the juice from your limes. If you don't have a citrus juicer, you can also use a fork or a spoon to squeeze the juice out of the limes.
  • Strain the juice: Straining the juice will remove any pulp or seeds from your syrup. This will give your syrup a smooth, consistent texture.
  • Use a heavy-bottomed saucepan: A heavy-bottomed saucepan will help to prevent your syrup from scorching. If you don't have a heavy-bottomed saucepan, you can also use a regular saucepan, but be sure to stir the syrup constantly.
  • Don't boil the syrup: Boiling the syrup will cause it to lose its flavor. Instead, bring the syrup to a simmer and then remove it from the heat.
  • Store the syrup properly: Lime syrup can be stored in a jar or bottle in the refrigerator for up to 2 weeks. You can also freeze the syrup for up to 6 months.

Conclusion:

Lime syrup is a versatile ingredient that can be used in a variety of drinks and desserts. It's a great way to add a refreshing, citrusy flavor to your favorite recipes. Whether you're looking for a simple syrup to add to your lemonade or a more complex syrup to use in a cocktail, there's a lime syrup recipe out there for you. So get creative and experiment with different flavors and combinations – you're sure to find a lime syrup that you love.
