Time 1h30m

Yield 12

Number Of Ingredients 20

3 ⅛ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cardamom
¼ teaspoon ground ginger
2 cups whole-milk ricotta cheese, at room temperature
2 cups white sugar
1 cup unsalted butter, softened
6 large eggs, at room temperature
2 tablespoons lemon zest
2 tablespoons lemon juice
2 tablespoons grated lime zest
1 ½ tablespoons lime juice
1 cup powdered sugar
4 tablespoons heavy cream
1 pinch salt
2 teaspoons lemon juice
1 teaspoon lemon zest
2 teaspoons lime juice
1 teaspoon grated lime zest

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch fluted tube pan (such as Bundt®).
  • Sift flour, baking soda, salt, cardamom, and ginger together in a large bowl. Set aside.
  • Beat ricotta, sugar, and butter together in a separate large bowl on medium-high speed until mixture is very light, 7 to 9 minutes. Mixture will look almost grainy and curdled--that is normal. Add eggs, 1 at a time, mixing well after each addition. Beat mixture on high speed for another 3 to 4 minutes. Mix in lemon zest and juice and lime zest and juice, until thoroughly incorporated. Add dry ingredients in three separate additions, mixing until only just combined after each addition.
  • Pour batter evenly into prepared pan and smooth the top. Tap pan on the counter a few times to remove any air bubbles.
  • Bake in the preheated oven until a bamboo skewer inserted into the center of the cake comes out clean, 55 to 60 minutes. Cool cake in the pan for 15 minutes before gently running a knife around the edges and center of the pan to loosen. Invert cake onto a wire rack to cool completely.
  • To make the icing: whisk together powdered sugar, heavy cream, and salt until completely smooth. Add in lemon and lime zests and juices and mix until thoroughly combined. Pour icing over the cooled cake.

KEY LIME TORTE WITH PINEAPPLE-RICOTTA FILLING RECIPE - (4.3/5)

Key Lime Torte with Pineapple-Ricotta Filling Recipe - (4.3/5) image

Provided by carvalhohm2

Number Of Ingredients 10

Pillsbury® Baking Spray with Flour
1 (8-ounce) can crushed pineapple in juice
1/2 to 3/4 cups water
1 package Pillsbury® Moist Supreme® Key Lime Flavored Premium Cake Mix
1/3 cup Crisco® Pure Vegetable Oil
3 large eggs
1 (15-ounce) container ricotta cheese
1 cup Pillsbury® Creamy Supreme® Key Lime Flavored Frosting, divided
Frozen whipped topping, thawed (optional)
Fresh lime slices (optional)

Steps:

  • Heath oven to 350°F. Coat 2 (8-inch) round baking pans with baking spray with flour. Drain pineapple, reserving liquid. Add water to pineapple juice to measure a total of 1 cup. Prepare cake mix according to package directions using pineapple juice mixture, oil and eggs. Divide evenly into prepared pans. Bake 34 to 38 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes. Remove from pans to wire rack to cool completely. Beat ricotta cheese, frosting and reserved pineapple in medium bowl with electric mixer on medium speed until blended. Level cake layers by removing rounded tops with serrated knife. Split both each cake layer horizontally to create 4 thin layers. Place 1 layer on serving plate. Spread with 1/4 of filling mixture to within 1/4-inch of edge. Repeat layers three times, ending with filling mixture on top of cake. Chill until ready to serve. Garnish with whipped topping and lime slices, if desired.

Tips:

  • Use fresh, ripe limes for the best flavor.
  • Grate the lime zest finely so that it incorporates evenly into the dish.
  • Do not overmix the batter, as this will result in a tough and dense lime ricotta cake.
  • Bake the cake until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before serving to allow the flavors to meld.
  • For the lime ricotta cookies, make sure to chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until the edges are golden brown and the centers are set.
  • For the lime ricotta mousse, use a high-quality chocolate that you enjoy. This will make a big difference in the flavor of the mousse.
  • Whip the cream until stiff peaks form before folding it into the mousse. This will help create a light and airy texture.
  • Chill the mousse for at least 4 hours before serving to allow it to set properly.

Conclusion:

Lime ricotta is a versatile ingredient that can be used in a variety of sweet and savory dishes. Its unique flavor and creamy texture make it a great addition to cakes, cookies, mousses, and more. With a little creativity, you can create delicious dishes that will impress your family and friends.
