I will also do this at least once on the charcoal grill - it adds that wonderful smoke flavor! ***overnight marination not included in prep/cook times****

6 garlic cloves
1/2 red onion, chopped
2 limes, juiced
1 jalapeno pepper
2 tablespoons thyme leaves, fresh
1 cup cilantro leaf, loosely packed
3/4 cup corn oil
2 tablespoons honey
3 lbs flank steaks
kosher salt, to taste

Steps:

  • Puree the garlic, onion, lime juice, jalapeno, thyme, cilantro, corn oil, and honey into the bowl of a blender or food processor until the ingredients are well incorporated. Marinate the flank steak with 1/2 cup of the puree in a resealable bag overnight in the refrigerator. Reserve the rest of the puree to use later as a sauce.
  • Preheat a grill for medium-high heat.
  • While grill is warming, remove the meat from the refrigerator and let sit at room temperature for at least 30 minutes. Discard any marinade left in the bag. Liberally season the steak with the kosher salt, and cook to desired doneness, approximately 4 minutes per side for medium-rare.
  • To serve, slice the steak against the grain into 1/8 to 1/4 inch slices, and drizzle the remaining marinade over the meat.

MARINADE:
3 Tbsp olive oil, extra virgin
3 Tbsp fresh lime juice (from about 2 limes)
4 clove garlic, thinly sliced
1 serrano pepper, seeded and thinly sliced
2 tsp chili powder
1 tsp ground cumin
1/2 tsp kosher salt
STEAK:
1 1/2 lb flank steak

Steps:

  • 1. In a glass pie plate, mix in the lime juice, oil, garlic, serrano, chili powder, cumin, and salt and stir well. Put the flank steak into this marinade mixture and turn to get it well coated. Cover it with some plastic wrap and put in the fridge for a few hours - up to overnight - turning every so often. Really, the longer it stays in the fridge, the more flavorful the steak will be.
  • 2. Take the steak out of the fridge and bring to room temp while you prep the grill by oiling the grates and preheating it on medium-high.
  • 3. Pat the steak with paper toweling to dry it. For medium rare, grill it for approx. 8-10 (flipping once). Keep it on longer if you want it more well done. Once done, let it rest on a cutting board for about 5 minutes. Slice the steak across the grain and on a slant and enjoy!

  • Use flank steak that is at least 1 inch thick for best results.
  • Tenderize the flank steak before marinating. You can do this by using a meat mallet or by scoring the steak with a sharp knife.
