12 ounces penne pasta (rotini, or other small shaped pasta)
⅓ cup sun-dried tomatoes (chopped, drained oil reserved)
3 tablespoons olive oil (drained from sun dried tomatoes)
1 pound chicken (boneless and skinless, cut into small cubes)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ teaspoon red pepper flakes
6 medium tomatoes (chopped)
6 cloves garlic (minced)
10 ounces spinach (fresh)
1 cup Parmesan cheese (freshly grated)

Steps:

  • Cook the pasta: Cook the pasta al dente, according to package instructions.
  • Cook the chicken: In the meantime, add the sun-dried tomatoes, olive oil, chicken pieces, salt, pepper, red pepper flakes to a large skillet, and cook over medium heat for 5 minutes or until the chicken is no longer pink.
  • Finish cooking: Add the chopped tomatoes, garlic, and spinach to the skillet and cook for another 3 minutes or until the spinach wilts a little.

I put this recipe together one day and really loved it! I used skim milk, whole wheat penne pasta, and Smart Balance 50/50 butter blend to make it a little healthier yet still creamy and satisfying! Next time I might add some mushrooms to add some more flavor. Special note: I prepared all of the penne but ended up leaving about two servings out because I like a more saucy pasta.

1 (13 1/4 ounce) package whole wheat penne
1 -2 boneless chicken breast
1 (14 1/2 ounce) can Italian-style diced tomatoes
2 cups Baby Spinach
1/4 cup Smart Balance Omega Plus
2 garlic cloves, minced (more or less according to taste)
1 cup skim milk
2 tablespoons flour, divided
1/3 cup parmesan cheese

Steps:

  • Prepare pasta according to package directions while preparing the sauce.
  • Cut chicken up into cubes and set aside.
  • Melt butter in a large skillet over medium heat.
  • Add garlic and chicken to the skillet and saute until chicken is cooked through.
  • Add tomatoes to skillet (do not drain) and simmer.
  • Add flour one tablespoon at a time to milk and mix until smooth with a fork or small whisk.
  • Pour milk/flour mixture into the skillet and allow to simmer until thickened. If sauce is too thick, add a little more milk at a time until you reach desired consistency.
  • Add baby spinach to sauce and cook for an additional 3-5 minutes.

1/2 large red onion, thinly sliced
1 1/2 tablespoons chopped garlic
1 tablespoon grated lemon peel
1 1/2 teaspoons minced fresh rosemary
2 large skinless boneless chicken breast halves, cut crosswise into 1/2-inch-thick slices
2 10-ounce packages ready-to-use spinach leaves
12 ounces penne pasta, freshly cooked, 1/2 cup cooking liquid reserved
1 2/3 cups grated Parmesan cheese (about 5 ounces)

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic, lemon peel and rosemary. Sauté until onion softens, about 7 minutes. Sprinkle chicken with salt and pepper. Add chicken to pot and sauté until just cooked through, about 4 minutes. Add half of spinach and toss until beginning to wilt, about 2 minutes. I wanted to create a summer dish with what I had on hand, I reviewed a number of recipes, either I didn't have all the ingredients or they had more fat content than I wanted. This is what I came up with and it turned out yummy for a lower fat recipe. I used pre-cooked chicken for speed, you can use diced fresh chicken, be sure to cook throughly before adding tomato and spinach. I recommend using Herb Ox sodium free instant chicken broth. 2 cups cooked chicken breasts, diced
1 cup fat free sodium free chicken broth
1 cup sweet onion, finely chopped
1 cup mushroom, chopped
1 tablespoon garlic, finely chopped
1/8 teaspoon nutmeg
1 cup fresh tomato, chopped
3 bunches fresh spinach, washed and chopped
1/2 cup reduced-fat feta cheese, crumbled
3/4 cup parmesan cheese or 3/4 cup romano cheese, shredded
1 cup light sour cream
fresh ground black pepper
12 ounces penne pasta or 12 ounces fettuccine pasta

Steps:

  • Cook pasta according to package directions. Drain and store to the side. Spray with hot water before serving, if needed, to loosen pasta.
  • Add 2-3 Tbsp of chicken broth to heated pan, add onion, mushrooms, garlic and nutmeg. Saute on mid high heat until onion is soft and mushrooms cooked, add more broth if needed to prevent sticking.
  • When onions and mushrooms are cooked, add chicken and remainder of chicken broth, cook until broth is almost completely reduced, leaving barely enough liquid to allow spinach to steam.
  • Add chopped tomatos to the top of chicken mixture, then layer the chopped spinach, cover and cook until spinach is steamed.
  • Add the cheeses & stir, then remove from heat.
  • Add the sour cream and mix well.
  • Salt and Pepper to taste.
  • Pour over cooked Pasta and serve immediately.
