1/2 lb. Ground Beef (80 or 85%)
1/4 cup old-fashioned oats
1 large tomato (diced)
3/4 cup refried beans (see notes)
½ teaspoon garlic salt
½ teaspoon onion powder
1 ½ teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon cocoa powder
¼ cup water
1 Tablespoon cornstarch
1/2 cup enchilada sauce
½ teaspoon sugar
½ teaspoon onion powder
1 teaspoon juice from diced green chilies
1/2 cup Cheddar (grated)
1/2 cup Mozzarella (grated)
1/2 cup Monterey Jack (grated)

Steps:

  • Preheat oven to 350 degrees.
  • Brown the beef in a pan over medium heat and drain any excess grease.
  • Add the oats and beef seasonings (except for the corn starch), and stir to combine. Heat until the water has reduced by half, about 5 minutes. Mix in the cornstarch and heat until thickened, about 3-4 minutes.

1 cup water
2 tablespoons cornstarch
1 10-ounce can of red enchilada sauce
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon juice from a can of green diced chilies
2 tortilla shells
1 16-ounce can of refried beans
½ tomato, diced
¼ cup mozzarella cheese
¼ cup cheddar cheese
⅓ cup pepper jack cheese

Steps:

  • Cook the can of refried beans, according to label's instructions, set aside.
  • Combine all meat ingredients except cornstarch in a pan on medium-low heat.
  • Cook for 2-3 minutes, until done, then add cornstarch.
  • As it begins to bubble, reduce to simmer, and cook for two minutes until thickened, set aside.
  • In a separate pan, combine sauce ingredients. Cook at medium-low until heated thoroughly. Set aside.

  • Spread the sauce on top of the top shell, almost to the edges.

  • Cover with a wet lid for about three minutes, until cheese is melted.

8 flour tortillas (6-inchinch")
cooking spray
1 (16 ounce) can low fat refried beans
1/3 cup diced tomato
2/3 cup mild picante sauce
1 cup shredded low-fat cheddar cheese
1 cup shredded low-fat monterey jack cheese
1/4 cup chopped green onion
1/4 cup sliced black olives

Steps:
