1 large tomato (diced)
3/4 cup refried beans (see notes)
½ teaspoon garlic salt
½ teaspoon onion powder
1 ½ teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon cocoa powder
¼ cup water
1 Tablespoon cornstarch
1/2 cup enchilada sauce
½ teaspoon sugar
½ teaspoon onion powder
1 teaspoon juice from diced green chilies
1/2 cup Cheddar (grated)
1/2 cup Mozzarella (grated)
1/2 cup Monterey Jack (grated)

Steps:

  • Preheat oven to 350 degrees.
  • Brown the beef in a pan over medium heat and drain any excess grease.

2 tortilla shells
1 16-ounce can of refried beans
½ tomato, diced
¼ cup mozzarella cheese
¼ cup cheddar cheese
⅓ cup pepper jack cheese

2/3 cup mild picante sauce
1 cup shredded low-fat cheddar cheese
1 cup shredded low-fat monterey jack cheese
1/4 cup chopped green onion
1/4 cup sliced black olives
