HONEY GRAIN LIGHT WHEAT BREAD (BREAD MACHINE - ABM)
I call this "Light" because there is more white flour than wheat flour. It is not intended to mean it's low in calories or light in color! Adapted from my Oster Bread Machine Book. Note: First ingredients listed are for a 1.5 lb. loaf. Ingredient amounts in parentheses are for a 2 lb. loaf.

Steps:
- In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- Mix sugar, salt, 1/4 cup melted butter, egg, and whole wheat flour into yeast mixture. Stir in all-purpose flour, 1/2 cup at a time, until dough pulls away from the sides of the bowl. Turn dough out onto a well floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place dough in bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
- Punch down dough, cover, and let rise in warm place until doubled again, about 30 minutes.
- Grease 2 dozen muffin cups. Punch down dough, and divide into two equal portions. Roll each into a 6x14 inch rectangle, and cut rectangle into twelve 7x1 inch strips. Roll strips up into spirals, and place into muffin cups. Brush tops with melted butter. Let rise uncovered in a warm place 40 minutes, or until doubled in bulk.
- Preheat oven to 400 degrees F (200 degrees C). Bake for 12 to 15 minutes, or until golden brown. Remove from oven, and brush again with melted butter.

Steps:
- Put all ingredients in bread maker in that order (unless your bread maker has a special requirement).
- Put on dough cycle.
- After dough cycle is complete, turn out onto a lightly floured surface.
- Roll into a log.
- Cut log into 6 equal sized pieces, make each piece into a roll.
- Place on a parchment sheet. I like to flatten them so they are more like hamburger rolls and better for sandwiches. Brush with oil. Cover with a cloth or piece of plastic wrap and allow to rise in a warmish place for 50-60 minutes or until doubled in size.
- Bake in a 200 degree oven for 12 minutes.
Tips:
- Use a digital kitchen scale to measure ingredients for the most accurate results. - Make sure your yeast is active before using it. To test, dissolve 1 teaspoon of sugar in 1/4 cup of warm water (110-115°F). Add 1 teaspoon of yeast and let sit for 10 minutes. If the yeast is active, it will foam up and double in volume. - Use freshly milled wheat flour for the best flavor and texture. If you don't have freshly milled flour, you can use all-purpose flour. - Knead the dough until it is smooth and elastic, about 8-10 minutes. This will help to develop the gluten in the flour and give the bread a chewy texture. - Let the dough rise in a warm place until it has doubled in size, about 1 hour. This will allow the yeast to produce carbon dioxide gas, which will cause the bread to rise. - Bake the bread in a preheated oven at 375°F for 30-35 minutes, or until the crust is golden brown and the bread sounds hollow when tapped. - Let the bread cool completely before slicing and serving. This will help to prevent the bread from tearing. Conclusion:
This recipe for light wheat bread or rolls is a great way to enjoy fresh, homemade bread without all the fuss. The bread is made with simple ingredients and is easy to make, even for beginners. With a few simple tips, you can make delicious, light and fluffy wheat bread or rolls that the whole family will love.
