LIGHT AND CREAMY VANILLA ICE CREAM - ANNE OF GREEN GABLES

I am posting this as it appears in the original book, which was written as a tribute to her father Stuart Macdonald (Montgomery's son). The recipes were written with precise instructions, geared for young cooks. All recipes were apparently tested by a 12 year old cook, with perfect results. - Put the whipping cream, electric beaters and one of the large mixing bowls in the refrigerator to chill.
- Put about 2 inches of water in the bottom of the double boiler and bring to a boil.
- Put the gelatin and the cold water in the top pot of the double boiler. Let the gelatin soften for 5 minutes away from the stove.
- Meanwhile, pour the milk into the small saucepan and place it over medium low heat. When tiny bubbles form around the edge of the pot, the milk is ready.
- To the gelatin in the top pot of the double boiler add the hot milk, sugar, corn syrup, flour, and salt. Place over the bottom pot containing the boiling water.
- Stir constantly with the wooden spoon until the mixture thickens- about 15 minutes.
- Put the lid on and cook the mixture over boiling water for another 10 minutes.
- Meanwhile, separate the egg into the 2 small mixing bowls. Set aside the egg white for later.
- Beat the egg yolk slightly with a fork. When the 10 minutes are up, stir the egg yolk very slowly into the mixture on top of the stove. Cook and stir for 1 more minute.
- Pour the hot ice cream mixture through a wire strainer into the other large mixing bowl.
- When the ice cream mixture has cooled to room temperature, beat it with the electric mixer until it is light and creamy - about 5 minutes.
- In the chilled large mixing bowl whip the cold whipping cream with the electric mixer until it falls in large globs and forms a soft peak.
- Rinse the beaters thoroughly with hot water. Then beat the egg white until it is stiff and glossy but not dry.
- Very gently with the rubber spatula, fold first the whipped cream, then the egg white into the ice cream mixture. Gently stir in the vanilla.
- Spoon the mixture into the metal bowl or pan and place in the freezer. Freeze for about 3 or 4 hours - until firm.

VANILLA ICE CREAM

- Put a large mixing bowl in the freezer to chill. In a saucepan over medium heat, bring the half-and-half, cream and vanilla bean to a simmer, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. In a bowl, whisk together the egg yolks and sugar. When the cream mixture reaches a fast simmer turn it off, do not let it boil! In a thin stream, whisk half of it into the egg yolk mixture. Then pour the egg-cream mixture into the saucepan containing the rest of the cream mixture. Cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees, the mixture will give off a puff of steam. When the mixture reaches 180 degrees, it will be thickened and creamy, like eggnog. If you don't have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready, if the edges blur, it is not quite thick enough yet. When it is ready, quickly remove from the heat. Meanwhile, remove the bowl from the freezer, put 4 handfuls of ice cubes in the bottom, and add cold water to cover. Rest a smaller bowl in the ice water.
- Strain the cream mixture through a fine sieve to remove the vanilla bean pieces, into a smaller bowl. Chill 3 hours, then freeze according to the directions for your ice cream maker.
AFTERNOON RUBY TEA BISCUITS
This comes from the Anne of Green Gables cookbook. These biscuits are wonderful, and one of the first things I learned how to make. Please note the recipe is designed for kids and writing as written.

- Preheat oven to 425 degrees F.
- Measure the sifted flour, baking powder, sugar, and salt and mix with fork in large mixing bowl.
- Cut in vegetable shortening until it looks like coarse bread crumbs.
- Add the milk and mix it into the flour with fork-but only until the mixture will form a soft ball.
- Place the ball of dough on a lightly floured surface and knead it 12 times.
- Rub some flour on rolling pin and roll the dough until it's about 1/4 inch thick.
- With a large biscuit cutter cut circles, very close together, in the dough. Use a straight downward motion and do not twist the cutter.
- With a spatula lift HALF of the circles, one at a time onto a cookie sheet and arrange them about 1 inch apart.
- With a small cutter cut a hole in the center of the rest of the circles to make rings and lift out the centers. Set the centers aside.
- Place the rings on top of the circles on the cookie sheet.
- Place a teaspoon of red jam or jelly in each ring.
- Bake biscuits for 12-15 minutes until golden.
- Immediately take bicsuits off cookie sheet with spatula.
- With centers bake into little biscuits.

- With the metal spatula, lift the shortbreads onto a greased cookie sheet. Place them about 1/2 inch apart. Prick each shortbread twice with a fork and sprinkle with sugar.
- Bake the shortbreads for 20 - 25 minutes until they turn light brown around the edges.
- With oven mitts, remove the cookie sheet from the oven. With the metal spatula, immediately lift the shortbreads onto a plate.

- Directions:.
- Grease and flour the cake pans. Pre-heat the oven to 350*F.
- Measure out the sifted four, baking powder, salt and sugar and mix together in the large bowl.
- Add the melted butter and the milk to the flour mixture and stir with the wooden spoon.
- Beat the mixture for 1 minute with the electric mixer.
- Break the eggs into the small bowl. add them with the vanilla to the cake batter, then beat with the mixer for another 3 minutes, constantly scraping down the sides of the bowl with the rubber spatula.
- Pour the cake batter evenly into the two cake pans. Bake for 25 - 30 minutes.
- Test the cakes with a toothpick. When they are done, use oven mitts to take them from the oven. Let them cool in the pans for 10 minutes.
- Slide the blade of the metal spatula around the edges of the cakes to loosen them from the pans.
- Place one of the cakes on a cooling rack. Place a second cooling rack on top. Hold the two racks together and flip the whole thing over. The cake is now upside-down on the rack.
- Gently lift off the pan and transfer your cake to a plate. Repeat with the other cake.
- Let the two layers cool completely before frosting.
CREAMY VANILLA ICE CREAM
This makes 1 gallon of the smoothest, creamiest and richest ice cream ever. The recipe came from my daughter's college professor. You can add fruit or other stuff like chunks of butterfinger candy bars, heath bars,chocolate chips, you name it. The possibilties are endless. You can also sub any flavor of soft drink for the whole milk and get a completely different taste.

PLUM PUFFS
This recipe, from Bluebird Hill Farms, was named for Marilla's famous plum puffs in the Anne of Green Gables books by L.M. Montgomery. They are a plummy muffin, dipped into butter and then cinnamon sugar; I've seen other muffin recipes called "puffs", too, and they seem to me a more likely produce from an old-timey farm kitchen than something more akin to cream puffs--which is how some fans envision plum puffs. Since there is no "official" recipe, we can only guess--but this recipe fits my vision to a "T"! Instructions for preparing plum pulp are included at the end of the recipe; it may be frozen or used for jam, as well. While the recipe doesn't specify, I'd think a cooking or dual-purpose English plum, such as Victoria, would be ideal. Times are estimated, and do not include preparation of plum pulp or cooling time.

- Preheat oven to 375°F Grease a 12-cup muffin pan.
- Mix together flour, baking powder, salt, 1/2 cup sugar, and 1/2 tsp cinnamon. Add 1 cup plum pulp (see instructions at end of recipe), cream, egg, and 1/4 cup melted butter and stir until combined (should still be lumpy, not smooth).
- Spoon batter into muffin cups to about 2/3 full. Bake about 20 minutes or until centers are set. Remove puffs from pan immediately.
- While puffs are baking, combine cinnamon and sugar. As soon as the puffs are removed from the pan, dip tops into melted butter, then into cinnamon-sugar mixture.
- To make plum pulp: Wash plums and place in a large pot. Add a little water (about 1/4 to 1/2 cup) to pot--just enough to make some steam. Cover and heat over very low heat until the fruit is soft. Pour the juice and some fruit into a colander set over a large bowl (to catch juices and pulp). Mash the fruit around with a potato masher (not too hard--you don't want to break the pits!) until most of the pulp and skins have been pressed through the colander. Discard the pits, add some more fruit to the colander, and repeat until all the fruit has been pressed through. 2 lbs of plums should yield about 3 cups pulp, which may be used for this recipe, frozen in containers or freezer bags, or made into jam. Look for European plums, not Asian plums as they are not as good for cooking.
