1 pound uncooked vermicelli
4 tablespoons olive oil
2 tablespoons unsalted butter
12 uncooked large shrimp, peeled and deveined
2 to 4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
2 to 4 teaspoons grated lemon peel
4 to 6 tablespoons lemon juice
1/2 cup Gallo® Family Vineyards Chardonnay
1 tablespoon capers, drained
15 Greek olives, pitted and halved
2 tablespoons oil-packed sun-dried tomatoes, cut into strips
1 cup minced fresh parsley
Salt and pepper to taste

Steps:

  • Cook vermicelli according to package directions. Meanwhile, heat oil and butter in a large skillet over medium-high heat. Add shrimp, garlic and red pepper flakes; cook and stir 5-6 minutes or until shrimp turns pink. Add lemon peel, lemon juice and wine; saute 1 minute. Stir in capers, olives and sun-dried tomatoes; saute 1 minute., Drain vermicelli; toss with shrimp mixture. Sprinkle with parsley; gently toss. Season with salt and pepper to taste.

Good olive oil
Kosher salt and freshly ground black pepper
1 pound angel hair pasta
4 tablespoons (1/2 stick) unsalted butter, melted
Zest and juice of 2 lemons

Steps:

  • Preheat the oven to 400 degrees F. Place the shrimp on a sheet pan with 1 tablespoon olive oil, 1/2 teaspoon salt and 1/2 teaspoon pepper.Toss well, spread them in one layer and roast for 6 to 8 minutes, just until they're pink and cooked through.
  • Meanwhile, drizzle some olive oil in a large pot of boiling salted water, add the angel hair and cook until al dente, about 3 minutes. Drain the pasta, reserving some of the cooking liquid. Quickly toss the angel hair with the melted butter, 1/4 cup olive oil, the lemon zest, lemon juice, 2 teaspoons salt, 1 teaspoon pepper and about 1/2 cup of the reserved cooking liquid. 1/2 pound bay scallops
1 medium zucchini, cut into 1/4-inch slices (1 1/2 cups)

1 small yellow or green bell pepper, cut into 1/4-inch strips
1 cup Progresso™ chicken broth (from 32-ounce carton)
1/4 cup lemon juice
2 tablespoons cornstarch
1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
1/4 teaspoon salt
2 cups hot cooked rotini pasta

Steps:

  • Peel shrimp. (If shrimp are frozen, do not thaw; peel in cold water.) Make a shallow cut lengthwise down back of each shrimp; wash out vein.
  • Mix shrimp, scallops, zucchini, yellow squash and bell pepper in 3-quart microwavable casserole. Cover tightly and microwave on High 8 to 10 minutes, stirring every 3 minutes, until shrimp are pink and firm. Drain; let stand covered 5 minutes.

4 cups baby spinach
¼ cup parmesan cheese, grated

Steps:

  • In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.
  • Drain and set pasta aside.

1 lb pasta of choice
1 medium onion, chopped
4 oz butter
1/3 c olive oil
1 lb raw shrimp, peeled and deveined
1/2 lb small raw scallops (or large cut in half)
2 Tbsp minced lemon zest
1/4 c lemon juice
1/4 c white wine
salt and pepper to taste
1/4 c toasted pine nuts (or pinole nuts)
grated romano or parmesan cheese, to taste

Steps:

  • 1. Pour a glass of wine for the cook, saving 1/4 cup for the recipe ;-)
  • 2. Cook pasta in salted water till it's al dente. I make the lemon butter sauce while the water is coming to a boil because the sauce is very quick.
  • 3. Saute onions in butter and olive oil on medium high heat until tender. Add shrimp and scallops and saute until shrimp just starts to turn pink and is almost done, but not quite. Overcooking the shrimp and scallops makes them very tough. Also the giant scallops take a long time to cook so I cut them in half to match the cook time of the shrimp if I can't find smaller ones.
  • 4. Add lemon zest, lemon juice, white wine, salt and pepper and cook for a few more minutes till bubbly and seafood is done.
  • 5. Pour lemon butter sauce over drained (NOT RINSED) pasta and toss with grated cheese and pine nuts. Serve and enjoy an amazing seafood pasta.
  • 6. Trader Joe's market has their frozen seafood blend of peeled raw shrimp, scallops, and calamari that I normally use. If you can find a combo bag of shellfish like this at your local market it is both super delicious and easy, just defrost and pour in.
