GRILLED GARLIC, ROSEMARY AND LEMON DIJON CHICKEN BREASTS

Grilled Garlic, Rosemary and Lemon Dijon Chicken Breasts image

This is a recipe my husband has used for years. He was a chef for 15 years and although it is very simple to prepare and make, it's really delicious. We don't usually measure everything out exactly as given in this recipe, but this just gives you an idea of about how much you'll want for the marinade.

1 1/2 teaspoons finely chopped fresh rosemary
1/4 teaspoon salt

Tips:

  • Use fresh ingredients: Fresh lemons and rosemary will give your chicken the best flavor. If you don't have fresh lemons, you can use bottled lemon juice, but be sure to use 100% lemon juice and not a lemon-flavored drink.
  • Don't overcrowd the pan: When you're searing the chicken, make sure to leave enough space between the pieces so that they can brown evenly. If you overcrowd the pan, the chicken will steam instead of sear.
  • Cook the chicken until it's cooked through: The best way to tell if the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken breast and cook until the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest before serving: Once the chicken is cooked, let it rest for a few minutes before serving. This will help the juices redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Lemon rosemary chicken is a delicious and easy-to-make dish that's perfect for a weeknight meal. With just a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy dinner idea, give lemon rosemary chicken a try.
