4 c original bisquick mix
1/2 c granulated sugar
2 Tbsp poppy seed
1/4 c (1/2 stick) butter, melted
1/2 c milk
2 tsp vanilla extract
3 eggs
1 can(s) (15.75 oz.) lemon pie filling
1 c powdered sugar
2 Tbsp milk

Steps:

  • 1. In a large bowl, stir all ingredients, except pie filling, powdered sugar and 2 Tbsp. milk, until blended; beat vigorously with spoon for 30 seconds.
  • 2. Spread two-thirds of the batter (about 2-1/4 cups) in a greased 13x9-inch pan. Spread pie filling over batter. Drop remaining batter by tablespoonfuls onto pie filling; lightly spread (batter will not cover pie filling completely).
  • 3. Bake in a preheated 350-degree oven for 25 to 30 minutes, or until golden brown.
  • 4. In a small bowl, mix powdered sugar and 2 Tbsp. milk until smooth; drizzle over warm coffee cake. Serve warm or cool.

Zest of 2 lemons
1 1/2 cups sugar
2 1/2 sticks butter
2 teaspoons vanilla
5 eggs
1/2 cup lemon juice
1 1/4 teaspoons baking powder
1/4 teaspoons baking soda
Pinch of salt
2 3/4 cups flour
1/4 cup poppyseeds
1/4 cup and 1 tablespoon lemon juice
1 cup confectioners sugar

Steps:

  • Preheat oven to 325 degrees. Butter and flour bundt pan. Mix lemon zest with sugar in small bowl. In a large bowl, beat together the butter and sugar with an electric mixer until light and fluffy. Beat in vanilla and eggs one at a time. Beat in lemon juice, baking powder and soda and salt. Mix in the flour until well combined. Stir in poppyseeds. Pour the batter into prepared bundt pan. Bake at 325 degrees for 45 minutes or until a knife comes out clean. Cool cake for fifteen minutes and then flip out of pan. To make icing, combine confectioner's sugar and lemon juice In small bowl and stir until smooth. When cake has cooled, drizzle icing over cake and serve.
