Time 10m

Yield 3 cups filling

Number Of Ingredients 9

2 cups sugar
4 large eggs
1/4 cup butter, melted
1/4 cup milk
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice
1 tablespoon all-purpose flour
1 tablespoon cornmeal
1/4 teaspoon salt

Steps:

  • Whisk together all ingredients. Use filling immediately.
  • Makes enough to fill one 9-inch pie.
  • (Tip: To make Lemon Chess Pie, pour filling into 9-inch unbaked pieshell and bake at 350 degrees F for 50 minutes or until firm. Shield edges to prevent excess browning, if needed. Cool completely on a wire rack.).

Tips:

  • For the best flavor, use fresh lemon juice. Bottled lemon juice can be used, but the flavor will not be as bright.
  • If you don't have a lemon zester, you can use a microplane grater to zest the lemons.
  • Be sure to strain the lemon juice before adding it to the pie filling. This will remove any pulp or seeds.
  • If you want a thicker pie filling, you can add a cornstarch slurry. To make a cornstarch slurry, whisk together 1 tablespoon of cornstarch and 2 tablespoons of water until smooth. Then, stir the slurry into the hot lemon juice mixture and cook until thickened.
  • Lemon pie filling can be made ahead of time. Simply store it in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 2 months.

Conclusion:

Lemon pie filling is a versatile and delicious filling that can be used in a variety of desserts. It is perfect for pies, tarts, and cheesecakes. With its bright and tangy flavor, lemon pie filling is sure to please everyone. So next time you're looking for a delicious and easy dessert, give lemon pie filling a try.
