LEMON-PEPPER FRIED CHICKEN

Lemon-Pepper Fried Chicken image

This lemon-pepper chicken was popular with my friends in grad school. We used to do the prep work at our desk and coffee table in the living room since we had only about 1 1/2 square feet of counter space in our tiny kitchenette. Serve chicken over rice with gravy, garnished with freshly ground pepper and lemon zest.

Number Of Ingredients 9

2 cups bread crumbs
3 tablespoons lemon-pepper seasoning
2 teaspoons dried basil
1 teaspoon dried oregano
1 ½ teaspoons garlic powder
salt to taste
4 skinless, boneless chicken breast halves
2 large eggs, beaten
vegetable oil for frying

Steps:

  • Mix bread crumbs, lemon-pepper seasoning, basil, oregano, garlic powder, and salt together in a shallow dish.
  • Pat chicken pieces dry with paper towels, dip in beaten eggs, and dredge through bread crumb mixture.
  • Heat enough oil to thickly coat the bottom of a frying pan over medium heat. Fry chicken until golden brown and no longer pink in the center, 8 to 10 minutes per side. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

Time 1h15m

Yield 4 servings

Number Of Ingredients 12

1 whole chicken, cut into pieces
1 tablespoon kosher salt
1/2 tablespoon granulated garlic powder
One 1.41-ounce packet Sazon seasoning
2 1/2 teaspoons freshly cracked black pepper
Zest and juice of 2 lemons, plus 1 lemon, sliced
3 cups all-purpose flour
1 1/2 cups cornstarch
6 to 8 cups vegetable or canola oil
1 egg
1/2 cup buttermilk
1/2 cup honey

Steps:

  • Season the chicken liberally with the salt, garlic powder, Sazon, 1 1/2 teaspoons black pepper and lemon zest. Allow the chicken to marinate for at least 30 minutes at room temperature. Then, combine the flour and cornstarch in a large bowl.
  • Meanwhile, add the oil to a skillet or a deep pot and heat until it reaches about 365 degrees F.
  • In the same bowl as the chicken, add the egg and buttermilk and combine well. Dredge each piece of chicken in the flour mixture and shake off the excess. Then, lower each piece of chicken into the oil and fry until golden brown and the chicken's internal temperature reaches 165 degrees F. Drain on paper towels to remove excess oil.
  • To make the glaze, add the honey, lemon juice, sliced lemons, and 1 teaspoon black pepper to a pot and bring to a boil. Then, pour over the cooked chicken and enjoy.

Tips:

  • To ensure even cooking, use a meat thermometer to check that the internal temperature of the chicken has reached 165°F (74°C) before serving.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • For a crispy coating, make sure the chicken is completely coated in the flour mixture before frying.
  • To prevent the chicken from sticking to the pan, use a non-stick skillet or a well-seasoned cast iron skillet.
  • If you don't have a deep fryer, you can shallow fry the chicken in a large skillet with about 1 inch of oil.
  • Serve the chicken immediately with your favorite dipping sauce, such as ranch dressing, honey mustard, or barbecue sauce.

Conclusion:

This easy lemon pepper fried chicken recipe is perfect for a quick and tasty meal. The combination of lemon and pepper gives the chicken a delicious flavor, and the crispy coating makes it irresistible. Whether you're serving it for a family dinner or a party, this dish is sure to be a hit.
