Tips:

  • Use fresh lemons. Fresh lemon juice and zest provide the best flavor for these pancakes. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will be less bright.
  • Don't overmix the batter. Overmixing the batter will make the pancakes tough. Mix just until the ingredients are combined.
  • Cook the pancakes over medium heat. Medium heat will help the pancakes cook evenly without burning them.
  • Serve the pancakes immediately. Pancakes are best served hot off the griddle. If you need to keep them warm, place them in a warm oven until you're ready to serve.
  • Top the pancakes with raspberry sauce. The raspberry sauce adds a delicious sweetness and tartness to the pancakes. You can also top the pancakes with whipped cream, butter, or syrup.

Conclusion:

These lemon pancakes with raspberry sauce are a delicious and easy-to-make breakfast or brunch recipe. The pancakes are light and fluffy, with a bright lemon flavor. The raspberry sauce is sweet and tart, and it perfectly complements the pancakes. This recipe is sure to be a hit with your family and friends.
