Lemon mayonnaise is a versatile condiment that can add a bright, tangy flavor to a variety of dishes. It is made with just a few simple ingredients: mayonnaise, lemon juice, lemon zest, salt, and pepper. The mayonnaise provides a rich, creamy base, while the lemon juice and zest add a refreshing citrus flavor. Salt and pepper help to balance out the flavors and create a well-rounded condiment.
This article offers two variations on the classic lemon mayonnaise recipe. The first variation uses fresh lemon juice and zest, while the second uses lemon curd. Both variations are delicious and easy to make, and they can be used in a variety of ways. For example, lemon mayonnaise can be used as a dipping sauce for vegetables, seafood, or chicken. It can also be used as a spread for sandwiches or wraps. Additionally, it can be used as a dressing for salads or as a topping for grilled fish or roasted vegetables. No matter how you choose to use it, lemon mayonnaise is sure to add a delicious and refreshing flavor to your meals.

STEAMED WHOLE ARTICHOKES WITH SPICY LEMON CAPER MAYONNAISE
This is a dish that takes you straight to a French bistro. I love it because we cook the artichokes whole and eat the whole thing! While the recipe calls for a steaming method, you can easily submerge them in a large pot of boiling, lightly salted water and cook until tender. When I was living in Paris, a glass of cheap, dry white wine with a few ice cubes and this artichoke with the spicy dipping sauce made for a classic bistro appetizer moment. Pull off the leaves, dunk in the sauce and enjoy. Scoop the fuzzy "hay" off the top of the artichoke to find the heart in the center-the best part! Don't like spicy? Simply make the sauce without the hot sauce or pepper flakes.

Steps:
- Place each artichoke on its side on a flat surface. Use a serrated knife to saw off the stem at the base of the artichoke so it can sit upright on a plate without falling over once cooked.
- In a large pot, add 3 inches of water. Insert a steamer basket. Place the artichokes top-down in the basket, wedged in a single layer. Cover. Bring the water to a boil over high heat and cook until tender when pierced with the tip of a knife, 30 to 35 minutes. If the pot runs out of water while cooking, simply add more to the bottom.
- In a medium bowl, whisk together the mayonnaise, oil, capers, mustard, vinegar, hot sauce and red pepper flakes. Taste and adjust the seasoning. Garnish with the chives.
- Serve the artichokes with the dipping sauce.

FOOLPROOF LEMON-GARLIC MAYONNAISE
Mayonnaise started out in life as a salad dressing, but the modern supermarket version isn't something you'd want to serve on its own -- or use to highlight the vegetables of the season. This soft, lemony version makes irresistible dribbles and pools on top of a composed salad, or can be spooned onto the side of the plate and used for dipping. The hot water keeps the mayonnaise smooth and fluffy. For an even lighter texture, use grapeseed oil instead of olive oil.

Steps:
- In small food processor or container of an immersion blender, combine garlic, anchovies, egg yolk and mustard. With machine running, slowly drizzle in 2 tablespoons olive oil and process until mixture is smooth and starts to thicken, about 2 minutes.
- With machine still running, slowly add remaining olive oil, lemon juice and 1 teaspoon very hot water. (A small splash from the kettle or tap is the right amount.) Process just until mixture reaches a loose mayonnaise consistency. If it curdles or becomes too thick, mix in more hot water a little at a time, pulsing machine so as not to overmix. Taste and adjust seasoning with more lemon juice, salt or pepper. Serve immediately, using a spoon to drizzle over salad, or cover and refrigerate up to 8 hours. Best served fresh, but keeps 2 days.

SMOKY ROASTED CHICKPEAS WITH LEMON-GARLIC MAYONNAISE
This recipe is inspired by the popular Spanish tapa patatas bravas, or papas bravas, crispy potatoes that are typically served with a paprika-stained sauce or a garlic aioli. Here, chickpeas crisped in the oven instead of the fryer are seasoned with smoked paprika and ground cayenne, then swaddled in a garlicky mayonnaise cut with lemon. Eat half a batch of these chickpeas for a great dinner, or eat them over lemon-dressed lettuces or parsley, steamed greens, pasta, toast or a fried egg. You can also roast another vegetable with the chickpeas, like cauliflower, broccoli, potatoes or carrots for a complete one-pan meal.

LEMON CUCUMBER TEA SANDWICHES WITH MINTY MAYONNAISE (OR HUMMUS)
I replaced standard cucumbers with lemon cucumbers from our garden! Adapted from ichef.com with a nod and hat doff to another site (grouprecipes.com) for the hummus idea. If you dislike mint, try another fresh herb: basil is always an excellent choice, lovage, salad burnet or good ol' parsley. For a more substantial meal, add greens-arugula, baby spinach, loose leaf lettuce; perhaps some finely minced shallots, heirloom toms, ad infinitum...

- With motor running, add the oil in a slow steady stream and blend until emulsified. Season to taste with salt and pepper and transfer to a bowl.
- Tea Sandwiches: Spread each slice of bread generously on one side with the mayonnaise.
- On half the slices, arrange an even layer of lemon cucumber slices. Top with remaining bread slices.
- Cut each sandwich into quarters before serving.

Tips:
- Use fresh lemons for the best flavor. The zest of unwaxed lemons is preferred.
- Make sure the mayonnaise is at room temperature before adding the lemon juice. This will help to prevent the mayonnaise from curdling. If the mayonnaise does curdle, add a teaspoon of warm water at a time until it is smooth.
- Taste the mayonnaise before serving and adjust the seasonings as needed. You may want to add more lemon juice, salt, or pepper to taste.
- Lemon mayonnaise can be used as a sandwich spread, a dipping sauce for vegetables or seafood, or a dressing for salads.
- Lemon mayonnaise can be stored in the refrigerator for up to 3 days. Discard any mayonnaise that has turned brown or has an off smell.
Conclusion:
Lemon mayonnaise is a versatile condiment that can be used in a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you are using it as a sandwich spread, a dipping sauce, or a salad dressing, lemon mayonnaise is sure to add a bright and tangy flavor to your meal.
