This lemon zucchini bread has wowed every person my Mom made it for, and she has now passed this tried-and-true recipe to me, with the same results. If you are tempted to skip the nutmeg, don't! It's the secret ingredient that makes this bread pop. This loaf won't last a day in your house, so it's best to double or triple the recipe to ensure everyone gets a slice! The loaf freezes well, just slice before freezing.

Tips:

  • Choose the right zucchini: Look for small to medium-sized zucchinis that are firm and have a deep green color. Avoid zucchinis that are large, soft, or have yellow or brown spots.
  • Grate the zucchini: Use a box grater or a food processor fitted with the grating disc to grate the zucchini. Grate the zucchini coarsely, as this will help to prevent the bread from becoming too dense.
  • Drain the zucchini: After grating the zucchini, place it in a colander and sprinkle it with salt. Allow the zucchini to sit for 10 minutes, then drain off any excess liquid. This will help to prevent the bread from becoming too watery.
  • Use fresh lemon zest and juice: Fresh lemon zest and juice will give the bread a bright, citrusy flavor. Be sure to use unwaxed lemons, as the wax can add a bitter flavor to the bread.
  • Don't overmix the batter: Overmixing the batter can make the bread tough. Mix the batter just until the ingredients are combined.
  • Bake the bread at the right temperature: The bread should be baked at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Conclusion:

Lemon Maple Zucchini Bread is a delicious and easy-to-make bread that is perfect for breakfast, lunch, or a snack. The bread is moist and flavorful, with a sweet and tangy lemon glaze.
