1/2 cup mayonnaise
1 teaspoon lemon zest
1 tablespoon lemon juice
1/8 teaspoon salt
2 tablespoons fresh chives, finely chopped (optional)
For the chicken burger
1 pound ground chicken
1 large egg
1 cup breadcrumbs, divided
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
To serve
4 brioche buns
1 ripe avocado, thinly sliced
1/2 red onion, sliced
1 medium tomato, sliced

Steps:

2 tablespoons extra-virgin olive oil
4 boneless skinless chicken breast halves
Kosher salt and freshly ground black pepper
1 clove garlic, peeled
1/4 teaspoon salt
1/2 cup chopped fresh parsley leaves
1/3 cup chopped fresh mint leaves
1 1/2 teaspoons freshly ground black pepper
1 lemon, zested and juiced
1/3 cup extra-virgin olive oil

Steps:

  • For the Chicken: Preheat an oven to 450 degrees F.
  • Heat a large ovenproof skillet over medium-high heat. Add the olive oil and swirl to coat the skillet. Season the chicken breast with salt and pepper on the smooth side of each breast.
