8 slices ginger, thin,unpeeled
1/2 cup whole fresh mint leaves
1/2 cup sugar
6 cups boiling water
1/2 cup fresh lemon juice
6 sprigs of fresh mint (optional)

6 cups water
1/2 cup honey

zest of 2 lemons, removed with a vegetable peeler
