Number Of Ingredients 12

1 pound ground chicken
½ cup grated Parmesan cheese
1 large egg, beaten
5 cloves garlic, minced, divided
2 tablespoons chopped fresh parsley
¼ teaspoon red pepper flakes
1 pinch kosher salt and freshly ground black pepper to taste
2 tablespoons extra-virgin olive oil
4 tablespoons salted butter
1 pound zucchini noodles
½ lemon, juiced
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Mix ground chicken, 1/2 cup Parmesan cheese, egg, 2 garlic cloves, parsley, and red pepper flakes together in a large bowl. Season with kosher salt and black pepper and form into tablespoon-sized meatballs.
  • Heat olive oil in a large skillet over medium heat. Cook meatballs until golden brown on all sides and no longer pink in the centers, about 10 minutes. Transfer to a plate and wipe the skillet with a paper towel.
  • Melt butter in the same skillet; add remaining 3 garlic cloves and cook until fragrant, about 1 minute. Add zucchini noodles to the skillet and toss into the garlic butter; squeeze in lemon juice. Add meatballs and heat just until warmed through. Garnish with remaining Parmesan cheese to serve.

LEMON GARLIC CHICKEN ZOODLES RECIPE - (4.1/5)

Provided by PineyCook

Number Of Ingredients 11

6 zucchini
2 chicken breasts (about 15 oz / 425 gr), cut into 1-inch cubes
4 tablespoons fresh parsley, chopped
1 cup cherry tomatoes, quartered
1 clove garlic, minced
3 tablespoons olive oil, divided
Juice of 1 lemon
1 teaspoon fine grain salt
Ground black pepper to taste
Grated parmesan cheese (optional)
Pinch of red pepper flakes (optional)

Steps:

  • Using a spiralizer create zucchini spaghetti (always read the directions as they vary by brand - I use this spiralizer.) If you don't have a spiralizer use a regular vegetable peeler to vertically peel long, thin strips of the zucchini. This will form more of a wider "noodle" from the zucchini, like fettuccini. Heat one tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add zucchini noodles and cook for about 2 to 3 minutes, until zucchini noodles are tender but still retain some crunch. Let the noodles rest for about 3 minutes so that they can release all of the moisture. Transfer noodles to a colander and drain the excess water from the pan. Wipe the pan and heat one tablespoon of olive oil, when sizzling, add chicken cubes and cook until browned on all sides, about 8 minutes. Add tomatoes and parsley, lower to a simmer and cook for 5 minutes, or until tomatoes start to break down and release some of their juice. In the meantime in a small bowl combine lemon juice, the remaining tablespoon of olive oil, garlic, salt, and pepper. Add zoodles to the pan alongside the lemon juice mixture. Stir until everything is combined and heated through. Sprinkle with Parmesan cheese and red pepper flakes (if using) and serve!

Tips:

  • For a more intense lemon flavor, use freshly squeezed lemon juice.
  • If you don't have zucchini noodles (zoodles), you can use regular spaghetti or another type of pasta.
  • Feel free to add other vegetables to this dish, such as broccoli, bell peppers, or mushrooms.
  • If you like your chicken extra crispy, cook it for a few minutes longer.
  • Serve this dish with a sprinkle of fresh parsley or cilantro for a pop of color and flavor.

Conclusion:

This Lemon Garlic Chicken Zoodles recipe is a quick and easy weeknight meal that's packed with flavor. The chicken is tender and juicy, the zoodles are light and refreshing, and the lemon garlic sauce is simply delicious. Plus, this dish is low in calories and fat, making it a healthy choice for any meal.
